Incredible Edible...

Whats going on? I am in a really great mood after my workout! I ran five miles and then took half of Body Pump. I am NOT a runner- my 5'1" body was certainly not designed for speed but today I felt really good! I have been so inspired by the food bloggers who are runners like Caitlin, Meghann, Lauren, Sammie, etc, etc. You all are unbelievable! Thank you for inspiring me to get more running in!! After the gym, I made breakfast for dinner (my fav). I made egg whites with chick peas and corn, potatoes and sliced pear. It was yummy and filling! Josh's plate:

I LOVED hearing about your thanksgiving plans! Safe travels to all of you work will be on the road and happy cooking to everyone out there! I cannot wait to see your creations! Tomorrow I have my follow-up appointment from my little hospital visit. Hopefully they will give me the thumbs up that everything seems good!

I never thought of egg whites and chick peas. Interesting. Down here it's always peppers, beans and shoved into a tortilla with cheese!

That is awesome! What a great workout! And yumm....breakfast for dinner is one of my faves, too. It's so good, why should we only eat it before 10 a.m.? :-)

I know! I always feel more urges to run after reading some other peoples blogs! I really wish it wasn't getting into winter because I'd much prefer to do it outside :)

Those potatoes look so yummy!

Congrats on the great run! I would have never thought to put chickpeas in my eggs but now I'm intrigued!

Good luck with your appointment :)

So glad you got out for a run today. It's nice to know we're inspiring poeple out there, even if you don't think you're built for it. :) If it makes you feel better, I'm 5'4" and not built for speed either. I think the challenge is in the endurance aspect. I may not be able to run 10 miles very fast, but at least I can run it. :)

You inspire me to want to take body pump classes! I'm going to be abusing my parent's gym membership over Thanksgiving adn I can't wait to see what fun classes they offer! :)

Good luck with you're Dr.'s appt. I'm sure it will be nothing but good news.

I love running outside...but not in the winter. I HATE the cold!! So now I am on my elliptical. I enjoy that too!! Good for you for running!!

I hope your appt. goes well!! Have a good day!

The blog world has inspired me to get running too! I definitely DO NOT have the runner-type body, but I am starting to enjoy it more and more!

Sounds like you are a runner to me. ;) That is great! My workouts have been good lately too. I think I'm extra motivated b/c of Turkey day coming up.

Thanks so much for the mention and huge compliment! There is no speed coming out of this body either, but just getting out there is an accomplishment!

I love how you added chickpeas to the egg whites - that looks really good!

Good luck at the appt!
