SnOMG & Happenings

Hello! I went a little MIA. Crazy, busy days led to no blogging. What’s been going on? For one, we got snow…well, a lot of ice. For Charleston, this is a very rare occurrence. Schools, bridges, and roads have been closed. The ice caused a good amount of damage, and I’m hoping we don’t lose the majority of our plants and trees:

Thankfully, its warming up! Its going to be 70 this weekend- whoop whoop!

In other news, Frank turned 8! Kaylin made sure he got a birthday balloon:

What are you up to this weekend? My weekend is off to a great start. Josh got me a 26.2 magnet for my car, this makes it official:

I did a quick, easy run this morning and took Body Flow. I’m trying to stretch more often:

after Kay’s nap, I’m hoping to take her to the park. We’ll probably have a low key in tonight. I have a few cool things planned for this weekend, will be back with a post on them soon!

26.2

Today, I ran my first full marathon! I’m so proud and so exhausted! My Mom also ran her third 5K (Go Mama Go)!

Last night, we headed downtown to pickup our packets. I made an easy peasy dinner of fruit

Pulled BBQ chicken sandwiches:

and salad. It was a great pre-race dinner. We all headed to bed. Around 1030 PM, we were hit with the oddest storm that included lightening and the loudest thunder I’ve ever heard. Kaylin could NOT sleep. Josh was a trooper and laid with her for a long while, so I could get some form of sleep. And then it was time…

It was FREEZING (for Charleston), so I hung out in the bathroom until go time.  The last miles were killer. I thought I was going to quit at one point. Until I saw the Mile 25 sign:

The volunteers were amazing. I couldn’t have done it without them.  Final time: 4 hours 22 minutes 45 seconds.

A little rough looking post race… And now! I’m making and eating cookies :). Tonight, we’re headed out to dinner with Josh’s family. What are you up to?

Restaurant Week & Launch Day

 

Happy Saturday! I hope you’re having a great weekend. Ours has been awesome. Friday, I enjoyed a great run and took Kay to the park. Friday night, we went to dinner with Josh’s parents at Grill 225 for restaurant week.  My parents stayed with Kay (thank you thank you). We tried to get a photograph before we went out, but we had a mini photo bomber:

Small Batch Pumpkin Nutella Muffins

Its cold today (in most spots in the US), I think its time to bake! I recently made another small batch of muffins and Kaylin LOVED them. Forget cookies, she is a muffin monster :)

Ingredients:

  • 1/3 pumpkin puree
  • 1 tablespoon unsweetened almond milk (or regular milk)
  • 1/4 c nutella
  • 2 tablespoons ground flax
  • 2 tablespoons granulated sugar
  • 2 tablespoons brown sugar
  • 1/2 c AP flour
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp cinnamon

Directions:

Pre-heat oven to 365 degrees F

Using a stand mixer (or in a large bowl), combine pumpkin, almond milk, nutella, flax and sugars. Add in remaining ingredients (yup, I only used one bowl). Mix until just combined.

Spray a mini muffin tin with non-stick spray. Use a cookie scoop (or rounded tablespoon) to place dough into tin. Dough should yield approximately 10-11 mini muffins. Bake for approximately 13-14 minutes.

Football Food & Resolutions

Happy New Year!! I hope you guys all had a fantastic New Years Eve/Day! We sure did. Very low key, lots of family time, just perfect. On New Year’s day, we headed over to my Aunt/Uncle’s house to watch the USC (South Carolina) game. My Uncle made delicious chili, my Mom brought a yummy dip, and I made these cookies (pre-bake…I never got a post bake picture):

Did you guys make resolutions/goals for this year? Last year, my goals were to run a half marathon (check x’s 3) and to donate blood every 8 weeks (check!). This year, I am hoping to run a new race (either distance wise or type (i.e. trail)), to continue to donate every 8 (made my first donation of the year this morning):

spend lots of time with my two favorite people:

and find some other way to give back (either by donating time, money, etc). I’m thinking of doing something for a kids charity. Any ideas?
