Peach Crisp and Anniversary Present

Hi All-

I hope you guys had a great weekend! Josh and I had a wonderful pre-anniversary weekend. On Friday we went and saw Get Smart at a nearby theater. It was a cute and funny movie. It wasn't phenomenal, but we enjoyed it :). Afterwards, we grabbed a quick dinner and came home. Still in a movie mood, we watched 21, which was fabulous!

Saturday AM I taught Hip Hop and ran. We then had a kickball game, which we tied. Saturday night we had our anniversary dinner out at a local restaurant we love. We came home afterwards and watched yet another movie. We rented the movie the Onion, which was terrible :(. I have never watched so many movies in a weekend!

This morning I made a Peach Crisp based on this recipe from Smitten Kitchen! I made a double dose of the recipe and brought it up to Josh as a special breakfast in bread! It was very sweet but VERY delicious! I will definitely be making this recipe again. In case the link isn't working, here is the (doubled and slightly adjusted) recipe:

Ingredients:
2 pounds peaches
4 tablespoons sugar (I used a little less sugar here than smitten kitchen did)
2 tablespoon flour
1 stick butter melted (or smart balance, or whatever substitute you like)
10 sugar in the raw (I used a little less sugar here than smitten kitchen did)
1 cup oats
1 cup flour
4 tablespoons sliced almonds

Preheat oven to 400 degrees.

Mix peaches (cleaned and sliced), 4 tablespoons sugar, and 2 tablespoons four. Place in bottom of 9x13 inch non-stick baking pan. In a separate bowl, mix melted butter, sugar, oats, flour, and almonds until well mixed. Place on top of peaches. Bake for 30-40 minutes




Tomorrow is our 1 year wedding anniversary. Even though we promised no gifts, I decided to get something special for Josh. On our wedding day we promised each other gifts less than $30 before the wedding and he cheated..... A LOT (more on this in my next post), so I decided it was ok for me to cheat this time. The traditional gift for a first anniversary is paper. I thought long and hard about what on earth I could possibly do with this and finally came up with something!! One of the wonderful girls in my sorority at Penn State is an incredible artist. I had her make up a drawing/collage of some of things in Josh's life that he loves. The result was absolutely incredible. I gave her almost no guidance on what I wanted where or how I wanted it done...she is the best!
