Fast Sloppy Lentils

Its always tough to go back to work after the weekend! I felt exhausted today and had a very slow Monday at work. After work, I practiced some Turbo Kick and then took Body Pump. After pump, I went to Josh's softball game and then came home to make a quick and easy dinner. I saw lots of postings for Sloppy Lentils but they all used a slow cooker and took approximately 8 hours to cook. I needed something way faster so I went with the following recipe (feel free to add in shredded carrots, chopped onions, green peppers etc, I made a bare bones version!):

Ingredients:
2 15 ounce cans dark red kidney beans
7 to 10 ounces tomato sauce (depends how sloppy you want them!)
1 T Chili powder
1 T Brown Sugar
1 tsp cumin

Directions:
Place all ingredients in a pot on medium heat. Allow mixture to start to boil and then turn heat to low, let simmer 10-15 minutes. Serve on buns or alone and top with cheese if desired.

This was seriously a delicious and simple combo. A great dinner!

I was just looking for a meatless alternative to sloppy joes!! I love it!

I'm still super jealous that you're a turbo instructor... I haven't been to a turbo class in so long! :(
