Sloppy Lentils

Hope you had a nice Tuesday! Mine was pretty good. Usual work, came home and did some house stuff, taught Body Step and then made a dinner of sloppy lentils:

On the side I had an apple and some tortilla chips (which I dipped in the lentils). It was VERY good. One of my favorite easy meals!

It sounds like most of ya'll are still on vacation! I am a little jealous ;). I hope you are enjoying yourselves! Do you have New Years plans? Josh and I are still exhausted from Christmas traveling, so we may go out to dinner and then just do a movie/hang out. We're so lame ;)

Low-key new years is the way to go. I am having a slumber party with my friends with lots of food and booze :)

hmmm lentils! i forgot I stashed some a few weeks ago! thanks for reminding me!

Jeff and I are kinda tired from going to his parents, then mine, then to his grandmas all in a matter of three days!

We are undecided!! One of our couple friends invited us to dinner "in", another invited us out to bars, and his family invited us over to their house(again- good thing I like them!) .

My premonition: we are going to end up at his parents.

yum - the sloppy lentils and tortilla chips look good. Your new years plan sounds great to me! I am going to rest up and try to make it past 1am. The bar we are going to is open to 4am - ugh.

You and Josh are so not lame. I guarantee Chris and I will be asleep by 10 PM tomorrow night. We like to joke that we celebrate the New Year when it occurs in India, around 3 PM our time. We'll have some afternoon Naan and curry, go to bed early, and wake up to a new year.

NewYears: Going to sisters house to watch season 4 of "LOST" in celebration of season 5 that starts in a few weeks =) It will be an all nighter.

Those look great!! Sorry about the tiredness today...I'm really excited- I have a gym buddy that I ALWAYS see in TKB..and we've chatted it up, she teaches spin- and we might get certified to teach TKB next year together!! eee, thanks for all your advice earlier when I asked you about your teaching stuff :D

We're the same. Our neighbors might have us over if they're having their yearly party, but otherwise we'll just hang out. They shoot off fireworks around our house b/c we're outside the city limits and Ben's always terrified of fire b/c it's so dry and grassy out here.

We don't have any big plans either, we usually don't get into the New Year's hoopla! We might stop by a friends party and then just watch movies! Happy New Year to you and Josh!

anon- You are correct, technically beans not lentils. I really wanted sloppy lentils one night but did not have the time to wait for them to cook so this was my response ;)

Happy New Year!! We stayed in too...we always do. We have a "party" with the kids then watch the ball drop...it's a perfect night.

Love the sloppy lentils and will definitely be giving it a try...they look awesome!!
