Buffalo Chicken Melts, Cheater Scones

We all survived Monday- yayyyyyyyyy!! How was yours? Mine was ok! Work flew by- I was super busy. I had to go back to the doctors today. It went well, I liked the doctor but he is making me go for a little minor procedure just to check on things. I go next Wednesday! What a pain- I can' t wait for this junk to be over!

Any who, Josh came home from the gym a starvin marvin so I made him up a buffalo chicken melt (seasoned then baked some chicken breasts, chopped them up, covered them in a little buffalo sauce and served with cheese). I put the melts on these light bagels I found at the food store this weekend. I also steamed up some broccoli and sliced up an apple for him.



I had a cheese and apple melt on a piece of bread with broccoli and apple (no pic- I had been snacking and wasn' t that hungry). I also baked up some scones. Josh's mom sent us some Sticky Fingers scone mixes in that fun package she sent to us a few weeks ago... so I made up the chocolate chip variety!! They were super easy and are very yummy!

Whats your Tuesday Look like? I have to work (durrr) and then teach Body Step!

Oooh, I am thinking about making scones tonight. I want to make something that resembles those vanilla bean scones at Starbucks. Tuesday is looking just as dull as today, otherwise :)

Love the site. My Monday was great. I'm actually grateful it's not Friday yet because i want to get a lot of good things done this week.

Good to know I'm not the only one who writes "any who". That bagel and cheese melt looks so delicious it's making my mouth water. Yumm.

Ugh....I hope you are done with your doctor stuff soon. Unless my doctor is McDreamy, I don't want to ever be in a doctor's office. :-)

Today I'm workin' (bleh), getting my hair cut after work and then going to see my niece and nephew!

No, unfortunately I'm not doing anything fun with my hair....it's curly so I pretty much get the same cut every time - I'm so boring. :-) But I am going to dye it darker this winter! I'm so scared, though!

Anything buffalo chicken is a winner in my book. I love the stuff!

I love scones too. Those look tasty. I want to try to recreate the ones I had in Ireland. I've made them before but I can never get them quite right.
