Sausage Stuffed Acorn Squash

Ahhhhhhh we relaxed most of the afternoon and it felt INCREDIBLE! I haven’t sat down for hours of relaxation in forever! I caught up on blogs, responded to emails, called friends and family, and watched football and movies! I also made up a beautiful looking dinner. While catching up on blogs one day, I came across an awesome blog, Boston Chef. I fell in love with a bundle of the recipes listed, but in particular a recipe for Sausage Stuffed Acorn Squash. I decided to make it up for dinner tonight, but omitted the pasta (since I figured Josh would have his fair share tomorrow from my bake).

Ingredients:
2 Acorn Squash
Sausage (I used a spicy turkey/chicken sausage)
Corn (or other veggies of your choice)
Pasta sauce

Directions:
Cut acorn squash in half lengthwise (not around the equator) and scoop out the seeds. Place the squash in a 9 x 13 glass baking dish flesh side up. Put a little bit of water in the dish and cover with foil. Bake for 40-55 minutes or until the squash is just fork tender (not mushy!) (Note: I did not have a glass baking dish so I used metal and they turned out fine).

While the squash are cooking, sauté sausage and mix with corn (or other veggies) and pasta sauce.

When squash are done, remove from pan, dump water, return squash to pan. Top squash with sauce mixture (and pasta if desired- see Boston Chef’s original post) and top with mozzarella cheese. Bake at 400 degrees for 20 minutes (or until the cheese starts to brown).

Oh yummy! That seems like it would be so easy to mess with, too. Yummy!
This week I'm just working. Being on break is so weird Erica! Suddenly all I'm doing is working on the same stuff, w/o teaching, clients, going to classes. I have to actually be intrinsically motivated! Uh oh! :)

Oh no , not eating for tuesday & wednesday would kill me! Can you drink? Like what about a smoothie?

Yum - I have got to try this recipe as I just thawed out some chicken sausage that's been in our freezer forever. I was going to look up recipes on the internet, but now I just need to pick up some acorn squash. I might try it with butternut. Thanks Erica!

wow, bravo!! That is a crazy good looking sausage flavor...good luck with your tests too :) I hung out with my mom before she had to get a colonoscopy aka she couldnt eat for a day or 2 and it's a sucky procedure- and she was bummin' but I'm so happy she got it over with to ensure she's healthy, so hang in there and I hope all is well!

This is a favorite of ours, too... we love making dishes that incorporate squash - and then eating the results out of them! Comes out delicious and beautiful. Totally agree with leaving the pasta out - your take sounds great.

I relaxed this weekend too. First, I exercised. Then, when the kids went down I put my feet up drank a chocolate protein shake, apple cinnamon tea, and ate an apple. When the kids woke back up we went and played in the snow.

That acorn squash has all of my favorite ingredients in it. It’s on the list of recipes to attempt. Thanks again for sharing!
