Salad Sunday

Hey guys! Hope you had a nice Sunday. I slept in this am and then headed to the gym. I did an hour on the treadmill (about 5.5 miles from a mix of running and walking). I then ran out for a few errands. I came home and did some laundry, packed for our trip, and then relearned some choreography for Body Step this week. For dinner tonight, I made salads and this bread.

Josh's Plate: Spinach, broccoli slaw, chick peas, pine nuts, craisins, cheese and bread. I also made him up some chicken (baked in the oven and covered in buffalo sauce) topped with cheese on toasted dinner rolls:

Now we're watching football/relaxing, getting ready for a short two day work week! Did you do anything special today? Are you taking any time off this week?

A two day work week sounds nice! I did a little Christmas shopping today. I just have Thursday and Friday off, but will hopefully be able to leave early on Wednesday.

i went to dance class, yay! :D Your dinner looks delish- i never eat garbanzos or chickpeas but i should work them in! J/w..Do you eat meat only a certain amount per week? Or is it just random- i try to work in veggie only dishes but sometimes they don't fill me :D

Sounds like a great run!! I just got back from "work it circuit" at my gym. Now, I hope I'm able to get as much stuff done as you did (including a trip to Whole Foods). :)

I am taking off the 26th->5th. I can't wait!! :)

i had a nice lunch planned with an old co-worker since i'm leaving...otherwise it's packing up and moving!

I get Christmas Day off, but we'll be working in the morning on Christmas Eve...not bad since I'm used to the medical world of working almost all holidays! I really need to try that brown bread! I say that everytime you make it!

Good lookin dinner as always Erica! I'd much rather have that brown bread over fries any day! I ran around like crazy today trying to wrap-up all my holiday shopping/wrapping. I can't believe Christmas is this week. I'm taking off Christmas Eve through early January. Can't wait to be lazy...although I'm not very good at it :)

Those salads look so yum! Nice reward for a fantastic run.

My parents had their holiday party tonight and I ate wayyyy too much... I think I'll be sleeping in tomorrow!

I'm working four nights this week but I have the days off... I'll need to use them wisely!

Yesterday I dragged my butt to yoga even though there's a foot of snow on the ground. It's always worth it though!

"The Hubby" is taking a half day on Wednesday, has Friday off, and is taking Friday off. He figures most of his clients would be busy and end up canceling anyways.

Hope you enjoy your two day week and your 6 days off =)
