Five

Hello hello! How are you? Fridayyyyyy! Its been a good week. Lots of subbing at the gym, the usual work stuff, and time with peanut and Josh has made for a fantastic week.

Christina does a Five on Friday post that I love. She points out all kinds of fun things (recipes, products, etc) that I end up purchasing/checking out. I figured I’d do something similar this week to help share the love.

1. Ellie clothes… obsessed!

2. Stride Rite kids shoes. I think they make the best kids shoes. Pretty often they have a buy 1 get 1 half off sale. Kay picked up these two this past weekend:

3. TJs Applesauce Crushers. Apples and other fruits blended into a squishable pack. These are awesome in the car for Kay (or me) and are very tasty. The ingredient list is great too:

4. Trader Joe’s Apple Snack Sticks. The ingredient list on these isn’t too bad and they’re delicious. Addictive! Josh, Kaylin & I have all been eating these:

5. GF Chocolate Chip Coconut Bars. I’ve made this recipe twice and love the outcome! My bars took a couple extra minutes in the oven, but totally delicious!

Crock Pot Turkey Sloppy Joes & Almond Butter GF Brownies

Happy Weekend! Wahoooo. This week seemed extra long to me, how about you? Friday night, we ended up just hanging in. I made breakfast for dinner and then we crashed.

Saturday, I taught step, took a family walk, did a few things around the house, and went to the park with Kay. Saturday night we had friends over for dinner. I made turkey sloppy joes in the crock pot:

and a dessert “parfait bar” with almond butter brownies, chocolate chip cookies, strawberries, blackberries, and cool whip.

Our friends brought over a delicious vinegar based slaw, an Asian noodle salad, roasted potatoes, and a giant green salad. It was a delicious meal! The kiddos ran wild and we all had a blast:

Asparagus Soup & Brunch

Hello! Hope you’re having a nice weekend. Josh was on travel last week and got home pretty late on Thursday night. Given this, we decided to hang in on Friday night. I made us a green meal, rather than a red meal, for Valentine’s day. I kicked it off with un-pictured fresh pineapple and spinach salad with dried cranberries, walnuts, avocado and olive oil:

For the main course, I made asparagus soup. I used this recipe, but subbed Greek yogurt in for the milk/butter/flour mixture.

The result was pretty delicious! Topped with cheese and more avocado:

Saturday was spent teaching, running errands, doing things around the house, and playing with the peanut. Saturday night, Kay and I went to dinner with Mimi, while Josh and his Dad were at a basketball game

Today, we headed up to my parents for brunch. I got a grilled vegetable and egg dish that was delightful.

4th Half & Super Bowl Dessert Tray

Hello! Happy Super Bowl Sunday! Are you watching the game? Who do you want to win? I’m sort of indifferent on the winner, but am excited to watch the game, the ads, and the half time show.

This weekend has been a good one. We had a low key night in on Friday. Saturday morning, I headed to Folly Beach to run my fourth half marathon, the Save the Light Half.

I was less than thrilled when I woke up to a very rainy day. It rained pretty hard for the first six miles or so, and for the last mile of the race. The course was beautiful and took us right by the beach (this is a picture from inside at packet pickup pre-race):

I decided to run this half sort of on a whim. A friend of mine mentioned it to me and I figured I was trained up from my marathon two weeks ago. It wasn’t a PR, but it was my second fastest half. I ran it in 1 hour 49 minutes 13 seconds and came in first in my age group!! Yayy for smaller races :).

I came home, rested, baked, and had a play date with friends. We tried Sol Saturday night for dinner. It was ok….

Sunday morning, Kay and I went for a run with friends:

and prepared the rest of the super bowl desserts. I made Jessica’s chewy oatmeal chocolate chip cookies, peanut butter cookies with chocolate chips, and chocolate covered strawberries (note: I have zero artistic ability ;)):
