2 Acorn Squash
Sausage (I used a spicy turkey/chicken sausage)
Corn (or other veggies of your choice)
Cut acorn squash in half lengthwise (not around the equator) and scoop out the seeds. Place the squash in a 9 x 13 glass baking dish flesh side up. Put a little bit of water in the dish and cover with foil. Bake for 40-55 minutes or until the squash is just fork tender (not mushy!) (Note: I did not have a glass baking dish so I used metal and they turned out fine).
While the squash are cooking, sauté sausage and mix with corn (or other veggies) and pasta sauce.
When squash are done, remove from pan, dump water, return squash to pan. Top squash with sauce mixture (and pasta if desired- see Boston Chef’s original post) and top with mozzarella cheese. Bake at 400 degrees for 20 minutes (or until the cheese starts to brown).
WHAT a great dish! You must check out Boston Chef’s blog!
What is on tap for the week? I have my yucky procedure on Wednesday to see whats going on with my digestive track. This means I cannot eat Tuesday and most of Wednesday (ahhhhh!).
Looks delicious! I'm going to look at that site as soon as I'm done with this comment. :)
Good luck with your procedure!
Looove acorn squash.
Hooray for relaxing!! Enjoy the rest of your night, Erica!!
Thanks for sharing the link - will check it out. And mm, looks delicious! Can't say I have actually tried acorn squash before. Definitely will try now! Looks super tasty!

Yum! Glad you finally got time to relax!!
Yum! I love stuffed acorn squash!
Oh yummy! That seems like it would be so easy to mess with, too. Yummy!
This week I'm just working. Being on break is so weird Erica! Suddenly all I'm doing is working on the same stuff, w/o teaching, clients, going to classes. I have to actually be intrinsically motivated! Uh oh! :)
So sorry you have to give up food for so long! LAME!
Mmm!! looks delish! you are soooo creative woman!
hope the procedure goes well this week!

HAVE A GREAT NIGHT ERICA!
DELICIOUS! I must make those sometime soon ( minus the sausage... i'm starting to not only dislike it - but hate it!)
Oh no , not eating for tuesday & wednesday would kill me! Can you drink? Like what about a smoothie?
I hope they find out what's wrong though!
Yum - I have got to try this recipe as I just thawed out some chicken sausage that's been in our freezer forever. I was going to look up recipes on the internet, but now I just need to pick up some acorn squash. I might try it with butternut. Thanks Erica!
I'm not big into sausage, but I love the idea of making pizza inside of squash. You've inspired me to try doing it (I never had thought of it)!! :)
wow, bravo!! That is a crazy good looking sausage flavor...good luck with your tests too :) I hung out with my mom before she had to get a colonoscopy aka she couldnt eat for a day or 2 and it's a sucky procedure- and she was bummin' but I'm so happy she got it over with to ensure she's healthy, so hang in there and I hope all is well!
I'm so glad to hear that you had some time to relax!
Mmm I think I would like acorn squash a lot more if it had sausage inside of it! That looks great!
BEST OF LUCK with your procedure, Erica! I'm so sorry to hear that you have to go through the process - please feel free to email me if you have any worries because I've been through it before and can try to ease your mind if I can! I'll be thinking of you.
I love acorn squash! That recipe looks delicious!
Busy week ahead for me! Lots to do, but it will all get done!
Hey Erica! THANKS for the link and the shout out!
This is a favorite of ours, too... we love making dishes that incorporate squash - and then eating the results out of them! Comes out delicious and beautiful. Totally agree with leaving the pasta out - your take sounds great.
Thanks again, really glad you liked it. We're trying to keep up with Boston Chef although our new blog (and it's subjects) are taking up alot of our time these days... http://bostontwins.blogspot.com
Squash and sausage...sounds like a match made in heaven to me! :)
And how sad that you won't be able to eat for a few days -- load up now!
Oh man that looks great! I love Aidell sausages but haven't seen that kind yet...I love me some spice so I'll have to search for them!!
Good luck with your procedure Wednesday!!
I love stuffed squash and Josh loves that sausage! Best of luck this week!!
these look incredible! good luck tomorrow!
I hope your procedure goes well! Digestive problems are never fun!
omgosh that looks incredible! i love the "AFTER" picture :)
I relaxed this weekend too. First, I exercised. Then, when the kids went down I put my feet up drank a chocolate protein shake, apple cinnamon tea, and ate an apple. When the kids woke back up we went and played in the snow.
That acorn squash has all of my favorite ingredients in it. It’s on the list of recipes to attempt. Thanks again for sharing!
erica, good luck tomorrow. I have a ton of digestive problems... not fun at all. I wish you the best of luck!
Sounds so tasty I love squash and this looks brilliant. :-)
