Blogger Week #2- Post 6- Meghann's Perfectly Portioned Shepherd’s Pie

Hello Hello and Happy Wednesday Night!! Did you have a good day today? Mine went pretty well! Work was busy and then I got a tonnnn done around the house. Just as I was finishing up my house work, Josh called starving! I had plans to go to the gym before dinner (and I did- ran 2 miles, walked 5 minutes, took 1 hour of Body Pump!!) but knew that I had plenty of time to make Meghann's Perfectly Portioned Shepherd's Pie for him and prep mine for later! Meghann's blog, The Inner Workings of a College Graduate, is one of my favorite blogs! She is always making up such creative dishes (she has won BSI- 3 times folks!!). She is also a dedicated runner and is so inspiring to me ;) I doubled her recipe tonight so that there would be enough for two servings. Josh's (pictured below) was made with a regular white potato. I made mine with a sweet tato. I also added some turkey meatballs to Josh's pie(they were leftover from Aggie's Little Meatball soup that I baked up (rather than cooking in the broth)). Here is her original recipe:

Meghann's Perfectly Portioned Shepherd's Pie

Ingredients:
3/4 cup cooked Lentils
Onion
1/4 cup Chicken Broth
1 tablespoon WW Flour
1/4 cup Corn
1/4 cup of Green Beans ( or Peas)
1 small Sweet Potato
Cheese
Salt
Pepper
Oregano
Garlic Salt

Directions:

  1. On the stove top heat up the lentils and onion.
  2. In a small bowl mix the chicken broth and flour and pour over the lentils
  3. Bring to a boil, then simmer for 5 -10 minutes or until sauce reduces
  4. Once sauce appears thick add the corn, green beans and spices
  5. Peel the sweet potato and microwave for 4 minutes
  6. Mash the soft sweet potato with some chicken broth
  7. Place the lentil combination in the mini loaf pan and then layer mashed sweet potato on top.
  8. Bake at 375 for 10 minutes, remove top with cheese and bake for 5 more minutes

Sorry that the white cheese on white potato didn't picture well ;). Great recipe Meghann! Both Josh and I loved it!
Do you guys have fun plans for the weekend? My dad is going to be in the area so we are going to go to dinner with him on Friday! I am SUPER excited.

Sounds like a good day for you! I need one of those good productive days around the house too! I did get my 4 mile walk in so I'm happy.

My plans this weekend consist of watching the Gators in the SEC championship...and hopefully getting some Christmas shopping done. Have fun with your dad!

This weekend I have another "business trip" BUT it includes eating at an amazing vegetarian restaurant so I'm really excited! How fun you'll be meeting up with your padre :)

oh...... you made it!!! I wanted to try it out too ( I bought sweet potato specially to make it, but haven't made it yet, bad me!)

You are too sweet! Thank you so much for all of the praise! I love your blog as well and was one of the first ones I became addicted to. :) I'm glad you liked the shepherd's pie and I love you rvariation. My favorite part of recipes is how everyone can mold and change the food to meet their needs.

This weekend is my half! I'm so excited and so nervous! I'm also hoping to get a new lap top some time (crossing fingers!)

Shepherd's Pie always sounded so yuck to me - until I tried it and WOW! It is amazing!! I will put this on my list, for sure.

I havent had shepherds pie in years. we lived in england for a while and I burnt out on it---but reading this? I think my burntoutnessment is gone!
