Bowl of Deliciousness

Yayyyyyyyyyy for almost Friday :) Today was a super busy day at work which = tons of coffee and not enough eating! By the time I left work, I was super hungry and hyper haha. I had a snack and did a bit of cleaning before heading out to teach Body Step.

For din din tonight, I made a bowl of deliciousness.

Ingredients
3/4 lb beef (or chicken or fake meat- whatever you like ;)
Olive oil
32 oz beef broth (or chicken or vegetable)
Rosemary, Thyme, pepper (or other desired spices)
3/4 cup orzo
frozen peas and corn (or fresh veggies)

Directions
Place a little olive oil and chopped up beef (or other meat choice) in a large pot. Cook until meat is no longer pink. Add broth, spices and orzo. Bring to a boil and then cook until orzo is tender (give it a taste!). Add in veggies and cook until broth has been almost completely absorbed. Enjoy! Top with a little cheese for some extra excitement.


What are you up to this weekend? I am hoping to finish planning my sisters baby shower (THANK YOU so so much for all the awesome ideas- I am totally using a few of them!), maybe a little shopping for myself, having friends over for dinner, and relaxing!

Weekend is crazy. The university where I work might go to the NCAA. I'm on call for PR updates all weekend :(

Mmm I LOVE orzo, but I never eat it! Wonder why.

Have fun at the shower (and congrats to your sister)! Can't wait to hear about it.

That IS a bowl of deliciousness! Hope your day today is not so crazy. Sometimes those days are okay, though, because they go by supah fast. :-)

Ben was sick all week, so we're taking it easy. I hope Josh is better! We had a party to go to tonight but it's a luau and it's 40 degrees and raining down here...someone explain that logic to me.
