Due to my OT the last couple days, I got to take most of today off. I used most of the day to play catch up. I got up at my usual time and headed to the gym for 20 minutes on the elliptical and Body Pump. The majority of the rest of the day was spent cleaning the whole house, doing laundry/ironing, getting my oil changed, and doing a little relaxing with the Frankster.
Tonight, I am headed to the cooking class I mentioned earlier in the week. We will be focusing on gnocchi and risotto. I will try and take lots of pictures (if I'm allowed). Since I'm leaving Josh by his lonesome, I threw him together a nice dinner to come home to -stir fry! This one contains ground turkey, water chestnuts, broccoli slaw, pineapple, leftover TJ's grain mixture, and stir fry sauce:
A sweet reader (Hi Melissa!) asked if I could post my typical day to day schedule. I will be putting this together and hope to have it up in the next post.
I hope you're having a good night. Whats on your dinner menu?

I'm headed to a friend's house for ladies' night... its all about apples so it should be interesting.... we are trying to help her use some of the apples from her backyard!
Have fun tonight!!!
Have a great night. Nothing more relaxing than relaxing with a bullie--they've got it down to an art. My broke self is going to Whole Foods for din. I can already tell you this is a mistake :). Oh well! Have a great night!
Sensational stuffed spuds! - sweet potatoes stuffed with white beans, tomatoes, avocado, basil, balsamic -- ourtesy of Lauren over at Say What You Need to Say :)

My dinner was pretty lame, frozen pizza. However, I did have a fresh lemon cupcake I made, totally made up for the less than exciting dinner.

OMG I think its so funny you have a post with water chestnuts because I was just commenting on Kelly from Beneath it All's blog about how I don't like them. Its like a water chestnut night!
Mmm, Greek! We live in an area with a lot of Greek immigrants and I really don't take advantage of the cuisine enough.
Have a blast at your cooking class!
I know this question is old, but... Ari is coming home tonight after 3 weeks away so, if he gets home early enough, we'll probably eat together!
Ohh cooking classes are so much fun! Can't wait to hear about yours.
I actually got hired by the Community Education board to teach about 10 classes in the home ec room this coming Jan-May! I am so pumped and just finished creating my classes :-)
Hope that cooking class is a blast! Can't wait to hear about it...
It was great to meet you!!
Tonight is beef bulgoki (or bulgogi, not sure) It is a two night process that started last night!
I hope the cooking class went well!

i'm such a fan of anything stir-fry...last night i made a huge salad from whole foods. i'm sooooo glad i can eat veggies again;)
Thanks for your willingness to post your schedule...I'm looking forward to it! :) Hope you're having a great day!
You don't ever have to apologize for not posting! You are one of the most consistent bloggers out there!
Enjoy your class!
I love when you say things like "squeeze in a 6 mile run," because it makes me feel like I should also be squeezing in running when I can! Even though I'm on a schedule, I always feel it's hard to fit it all in - and you make me realize it's entirely possibly!
Enjoy your cooking class!! I love gnocchi, I hope you get a great recipe to share!
Have fun at the class - it sounds fab! dinner tonight is chicken, brussels sprouts and cranberries, and mashed sweet potato. Its cold and rainy, so a thanksgiving type meal seems appropriate.
Dinner tonight is a new salad - I hope we like it!! :) Fun you met a reader at the dinner! "Quick 6-mile run" - I hope that will be me one day!
Can't wait to see how your cooking class goes!!! So cool that you got some time off--isn't it great having a day to just catch up on life?
Have fun! I've always wanted to learn how to make gnocchi :D Stir fries containing pineapple and water chestnuts are a winner in my house ;) I ate dinner already (it's almost 11pm)- Greek wrap! Grilled chicken, salad and tzatziki in a wrap. Mmmm...
I love a good Greek salad with pita bread! It is so hard to find a good one though.
Lately (for the last 2 nights)we've been eating grilled chicken burritos with rice, caramelized onions, blue cheese and mushrooms. Did I make you hungry? LOL
Usually since dinner is cereal and a banana half the nights of the week, it might be better to say what lunch was haha
and it was a fantastic brown rice cali roll followed by a mashed banana with some plain yogurt and flax. Kind of an odd combination, but still yum all around.
