Pumpkin, Bean & Veggie Soup

I woke up this morning with my usual sleepy Monday morning eyes and knew today would be heavy on the coffee ;). After work, I decided to do a quick run 4 mile run. Since I have to fit in running when I’m not teaching, these last few days have been very running intensive. To ease my aching muscles, I decided to do Polly’s Yoga for Runners again. It was fantastic! Afterwards, I took Franky for a walk and scrubbed up the kitchen floor.

For dinner tonight, I went with a pumpkin soup based on this Libby’s recipe.

Pumpkin, Bean & Veggie Soup (makes 1 big bowl)

Ingredients:
1 tsp olive oil
Desired amount of garlic
½ bell pepper, chopped
¼ teaspoon cumin
1/8 teaspoon thyme
¼ cup of corn
1 tomato, chopped
¼ cup of beans
½ cup pumpkin puree
½ cup vegetable broth
1/8 teaspoon cayenne pepper (optional)
Greek Yogurt (optional)

Directions:
Heat oil. Add garlic & peppers and cook until soft. Stir in cumin, thyme, corn, tomato, beans, pumpkin, and broth. Bring to a boil then reduce heat and let simmer for 10 minutes. Top with cayenne pepper and a little Greek yogurt, if desired.

This was seriously AMAZING. I can't wait to make it again. I topped it with tons of cayenne pepper for a nice kick. On the side I had an apple to complete my fall themed meal:


Tonight I plan to work on my play lists/tracks for Body Step and Attack and then REST.

Mmmm....GREAT soup! My favourite fall meal is probably a roasted chicken and baked squash of some kind....

ERICA OH MY GOSH!!!!!! This is so crazy, but I had this same recipe on my mind ALL day! I make such a similar soup, Pumpkin Black Bean and I have big plans on making a big batch this weekend. Oh wow, it's like we are foodie twins today. Haha, I love it. ;)

Mmm, that sounds like wonderful soup! As the weather has been turning cooler, it's just a given that the need for soup is near, haha. I'll definitely remember this soup when I decide to finally make some.

Great fall meal. It is finally cooling off here. I love black bean soup, butternut squash soup, roasted pepper soup, etc. I have lots of recipes on my blog fo soups:) Healthy and comforting meals for fall. I also love apple and pumpkin flavors!

What a fantastic fall recipe - looks like you did a great job!! I've had pumpkin chili before which is somewhat similar, however I really like the addition of the corn to this one! Right now my fave fall dish is roasted acorn squash w/ maply syrup, brown sugar and walnuts like I made the other night - yummmm :)

My favorite fall meal? Well, it's more of a dish but I only eat green bean casserole on Thanksgiving and it's a good thing. You know how I get obsessed with certain foods/meals, if I had this year round I'd be like Alice when she ate the 'eat me' cookie - BURSTING out of my house ;)

Mmmm!!! I am copying and pasting this recipe now. :-) I am a soup QUEEN - year round! But I do eat more of it in the fall/winter. Looooove my black beans. Black bean/sweet potato soup is probably my fave!!

AAAH I love this soup idea! A perfect find for this first day of fall. :) Thanks for sharing--I have some excess black beans that might be destined for pumpkin soup. One thing I've been loving in the past week or two is just steamed winter squashes, root veggies and greens with a really killer dressing. I've been ordering it in restaurants but have yet to make it myself, despite the fact that it's so simple it's almost a crime to order it in a restaurant! It's just one of those discoveries where you realize how good food tastes plain sometimes. :)

I think my favorite fall meal involves roasted pork loin, sauteed apples and a baked sweet potato with some kale or other greens on the side. I start craving that kind of meal this time of year.

I also love soups and chilis when it gets cool. Meals in bowls are definitely my fall go to foods!

That soup looks awesome!!! I have almost everything to make it except pumpkin...I think I will have to pick some up. I could even add some turkey (we're meat eaters) and it would be like Thanksgiving dinner :)

I've never cooked with pumpkin but that looks SO good and so fall. :) I don't think I have a fall meal - unless chili counts as the fall is when I bust it out! If so - I love white bean chicken chili. YUM!

Wow, that really looks like the perfect fall meal! I like that the recipe doesn't contain too many ingredients, it definitely seems doable! Pumpkin is one of the greatest ingredients of all time:)

omg that soup looks amazing! i hate pumpkin, but i love pumpkin soup..i think it's because it makes the pumpkin taste savory and not sweet. pumpkins can't taste sweet to me!!!
