Pulled Pork, Corn Bread, Pole Beans

The first day back after a long weekend is always a tough one - I hope yours wasn’t too bad!

After work today, I prepped dinner and got laundry moving. On Monday, I had cooked up some Pulled Pork in the slow cooker to use for a few of Josh’s meals throughout the week. His dinner tonight includes bbq pork, cooked pole beans, fruit (leftover breakfast banana), and some cornbread that I made up this afternoon. I used a Mark Bittman recipe.

For myself, I prepped pole beans, peppers, tomatoes, corn bread, and pinto beans that I cooked up with some chili powder. I will probably also cut up either some cantaloupe or an apple with some delicious nut butter!

Edited to Note: I prepped dinner early as I had to teach Body Attack tonight :)
I really enjoyed reaching the goals I had set for myself this weekend, and decided to set a few for this week.

Goals For the Week:
  • Get at least 6.5 hours of sleep per night (I realize this is low, but I’ve been really bad about getting enough sleep..baby steps ;))
  • Take a walk with Josh
  • Spend at least 15 minutes a night just relaxing (not blogging, doing house work, cooking, etc)

Good luck accomplishing your goals. It's so smart that you made realistic & measurable ones. I hope you can get the 6.5 hours - it's amazing how different I feel on the nights I got enough vs the ones I don't.

it was *really* hard getting back into the grind again. at the gym today I was lagging, seriously lagging. I totally pigged out yesterday.
I need to get more sleep too; I only get about 6, but really need 7/8. I used to get 10 hours, I know it's a lot, but man my skin looked amazing.

Ugh, the day after a 3 day weekend is the worst but at least it's alreday Wednesday tomorrow, right?!?!

Love the goals this week. Especially the last one, I really need to work on that one myself. It's so important to just completely relax and turn off everything for a few min. a day!

I didn't work today, we were traveling. We are finally back home after a long day. We had a great time in IL though. Great goals-I don't sleep well at all. I try to improve on it, but no solution yet:) We just got home and don't have much food in the house, so I am enjoying a bowl of watermelon for dinner. Will have to go to the store tomorrow! Have a good night!

I hear ya on the sleep. Sometimes I wonder where the night goes, then the next morning I'm mad that I didn't get to bed sooner.

today was rough girl! uh...i gotta get to bed. i had to wake up way early and couldnt fall asleep last night!!!! that dinner was KILLER by the way. loved!:)

I had a pretty good day back - but was definitely glad to get back home - woo! How do you get by on 6.5 hours of sleep (or less)?? I can't - i'm now jealous!

I have trouble getting sleep too. I stay up doing homework and average 3-4 hours some weeks! I should work on that :)

Happy Monday (Tuesday). Oh, regarding goals...I am doing that 101 in 1001. I find it's great for long and short term goals and I left some room in case I think of new things as the 1001 days inch along :)

I definitely need to work on my sleep factor also. That 15 minutes of "me time" sounds like the perfect start to a relaxing night's sleep...

My day wasn't anything out of the ordinary because I don't have class/work Mondays. However, Tuesday WAS LONG! Happy Wednesday!!

I like your weekly goals! And I know what you mean about 6.5 hours being low - but needing it. I generally get 7 at the most, so I've been aiming for 7-8 this week. So far it's working, but I keep sleeping in!

Good luck - and definitely take those breaks for yourself! That sounds lovely. I should do the same :)

That's so funny...this morning I was saying to myself that I really need to calm down a little and have some me time. I only get about 6 hours of sleep a night and I was going to try that my cutting back on some things and actually try to enjoy a night of relaxing! lol Good luck! :)

6.5 - oh dear, yes please, I support that goal 100%! It's a busy time of year but you don't wanna burn out.

Setting goals btw is very smart thinking! It really helps focus your efforts. My current goal is to not look at the computer after 9pm. Baby steps!
