I also made up some pita chips and a black and white bean dip based on Liz's recipe:
1 can black beans
1 can white beans
1 cup frozen corn kernels
7 oz. hot salsa
2 cups shredded co-jack cheese (I used 2% Mexican cheese)
1 cup chopped tomatoes
garlic salt to taste
cilantro to garnish
1 tsp cumin
2 tsp chili powder
Preheat the oven to 350°.
Rinse and drain both cans of beans. Squeeze the liquid out of tomatoes before chopping so the dip doesn’t turn runny. Put all ingredients except cilantro and cheese in a bowl and mix together. Grease a shallow baking dish before spooning in the bean mixture. Sprinkle a little cheese on top.
Bake for 20 minutes until the cheese is melted and the dip is heated through. Remove from the oven and top with cilantro.
I made up about half of the dip (that picture makes it look wayyyy cheesier than it was ;)). The remainder (without the cheese), I froze with additional veggies and I will bring it in for lunch this week. Are you ready for Monday?
Great looking fruit salad...and dip!
I'm as ready for Monday as I'm gonna get! I think it'll be a fast week, though!
Glad you had a relaxed day!! Hopefully that'll make it easier for you to transition into tomorrow (oh, Mondays...).
Mmm, fruit salad & bean dip!! Scrumptious.
I'm not ready for Monday at all :(. Having issues with the owner of the restaurant (she is dragging her feet on my recommendation form and its making me resentful...I'm a bad person).
The dip looks way yummy.
haha i stared at the fruit salad for about 5 minutes trying to figure out what the white things were- and then i figured out they were apples.
i think they are apples.
i am reallllllllly upset that tomorrow is monday - im hoping im dreaming and tomorrow is really sunday :)
that bean dip looks delish! thx for posting that recipe ;)
Your fruit salad looks really good! I love fruit ... I can't believe it's Sunday night either, though for some odd reason, I feel kinda ready for Monday, haha.
wowwwwwwwwwww. that bean dip looks insanely gooddddd! love the melty cheese!
I always have mixed feelings about Monday- excited to skate, but also nervous for the hard work. It's fun and also so sooooooooo tough. Whew, I try to just take it one day at a time!
Happy Monday to you Erica!!! :)
That dip looks incredible.
I am actually ready to go back to work! I miss the kids I work with!
GORGEOUS fruit salad - pineapple, yum! Love the dip and your variation too!
I'm ready for Monday but only because I'm still on break, good luck tomorrow :)
Mmmm...the bean dip looks so good!
I do not want to work tomorrow either! I think my office mate is out all week, so at least I'll have the place to myself if I'm grumpy.
Yummy dip paired with football! I am so not ready for Monday, but the light at the end of the tunnel is Martin Luther King and Inaugural in two weeks! Have a great night!
That fruit salad looks so pretty. It would be great with some pinkberry underneath it. I am so not ready/looking forward to going back, but I still have one more day. Ugh.
ohhh. that all looks so good. and the colors on the fruit salad are so pretty!!!
that fruit and dip look fantastic!! I will have to make the dip soon.
I am leaving for my mom's tomorrow and I am not packed yet so- nope, not ready!

Yum I love bean dips!
Wow that dip does look cheesy...and so good! Am I ready for Monday...no, not really. First day back. I've gotten use to sleeping in which means 7 AM. That 5:30 AM alarm is going to hurt!
Thanks for sharing the recipe! I want to try it now!
that fruit salad looks divine- i love pineapple! don't you just love leisurely days. that dip sounds great too. Hope your monday is better than expected
That fresh fruit looks delicious! And you certainly fooled me, that dip looks completely cheesy!
Im kinda NOT ready
but it's here.
around here anyway as my Toddler was up at 4a.
where's that coffee??
Yeah, I just recently started making yogurt (partly because of the price of Greek yogurt, I understand!) My first batch didn't turn out, but after reading a little bit about what might have gone wrong I tried again and it really didn't end up being too hard, just a bit time consuming the first few times until you get the hang of it more. We go through it so fast though, so if I keep up with it, I tend to have to make it more than I'd like to! lol. (but it's really good and probably worth it;)
Ok...that fruit and bean dip looks awesome! I'm totally making that!!
I am ready for Monday! Fresh start!
That dip looks delicious - yummy & cheesy!!
It is already monday and I am still not ready. ;)
the dip looks great!
LOL it's Monday and I'm definitely not ready at all. In fact I'm leaving work already to work from home. I hope YOU and your hub have a great week Erica!
new house?!?!?! congrats!!!
Those pics are making me hungry!!!
the fruit salad is so pretty and the dip looks good!
The dip looks good! The whole place was covered in snow this morning, what a great way to start off the day =(
My first time here. U have a lovely place here & awesome recipes. I love that salad.... I like colorful salads.
Your fruit looks so tasty!
I was excited to find a big package of fresh blueberries at TJ's yesterday for only $2.99!! A great reminder that the Spring is right around the corner ... full of fresh fruits!
The dip looks so tasty! I have got to fill up on Mexican type foods before next week when I head back to Brazil. Their weak attempt at Mexican is awful. :)
That looks great and healthy! Love it.
I'm going to make your dip tonight to bring to my friend's house to watch the Gator game!! Can't wait, it looks great!!!
