Fajitas, Some Bad Pictures ;), Product Reviews

Hello guys! Thrilled its almost Friday, how about you?

This afternoon/tonight has been busy but great! I cleaned the apartment, took Frank for his usual stroll and then taught Body Step with my friend Kristen! The class was packed and so high energy! I was drenched by the end! Before I left to teach, I threw together Josh's dinner. I cooked up these bad boys in the microwave:

And cooked up a few chicken breasts covered in chili powder and a few other spices. I then added the cooked beans and some corn.
All of the above was served with tortillas, spinach, cheese, and these black refried beans to make some fajitas!


These black refried beans were NOT good! They weren't creamy at all. I am going back to the TJ's brand!
When I got home from teaching, I made myself a dinner fajita under the broiler using corn, the black beluga lentils (sooo yummy) and a little cheese. On the side I had an apple with a little PB. It was an odd combo of a dinner, but very very good :)
Weekend Plans? We're going out to dinner with Kristen and her husband tomorrow night. Saturday AM we're launching Body Step at another gym and then we have tonsssssssss of errands to do!

Ha, yeah, we've tried that brand of a can with a rice/bean mix in it and we also hated it! I think we even still have a can in our cupboard because once we opened one we were like, yep, not gonna eat this again. lol.

And guess what? The weekend's almost here, yay!!! ; )

ugh. i have to work this weekend on saturday to do some intern recruitment, and then nick and i bought a new bed frame that we have to actually assemble this weekend. sorry about the beans! that stinks!

I've had those refried beans, and I agree - they came out of the can like a brick. Blech. I'll have to try TJ's.

Gosh, is it the weekend already? We have a going away party for some friends tomorrow night, and then on Sunday Chris is going to watch football while I watch very clever and expensive commercials. :)

On my last trip to Chicago, I totally bought those lentils at TJ's to stock my hotel kitchen--so convenient!

Those lentils look really good, I didn't know you could microwave them (lentils fall into the "food i dont know how to cook, so I'm therefore afraid of them" category!)

You can't go wrong with TJ's beans, that's good to know about the Eden brand!

oh goodness gracious I love reading about your life. Did you rinse those lentils before cooking? I tried to get rid of the rough discolored pieces but couldn't figure out how the heck how... the bag did not say to rinse them so I assume i didn't need to ?

anyay, how fun having dinner with your friend kristen and hubby! i leave for my g-pa's today and then jeff is heading there tomorrow to pick me up and then we are driving out to asheville for saturday to see our friends and go to a rock show and then we are coming back to durham to our friend's for the superbowl and we will get back on monday!! Geez- crazy travellizzing

your chicken looks fab but that stinks about those refriers.

Mmm I LOVE fajitas! At the restaurant I was working at this past break, the fajitas would come sizzling to the table and they would smell SO GOOD as I stood by the door greeting people. Torture!

No plans yet... first weekend back from break SHOULD be busy, but it's so cold that no one wants to go out!

I have never tried lentils....they look yummier than they sound. :-)

This weekend I'm just getting house stuff done and then going to my friend's house (conveniently across the street) for a SB party. I have a feelin' some indulging will be going on!

Try Bearito brand (I think that's the name).

Oh and re: the coffee (not sure if I emailed this to you) I just add the coffee grinds (2T), then pour in some cinnamon and about two pinches or so of turbinado sugar. Then I make the coffeee!!!! It's good. I add warmed soy milk and I love it.

Hope the launch went well! Glad to hear the lentils were good. I think black foods are so interesting and apparently full of nutrients. :)
