Baking and Beef and Broccoli Plus

Today has gone by too fast, but it feels like this is true every Sunday! Did you enjoy your day?

I got up and went to Body Pump and then ran to Kohls to pick up a new cookie sheet (the only one I have in the apartment is in terrible shape). When I came home, I took Frank for a walk, watched the Eagles (they won!!) and then got to baking! I made Sarah's granola:

Some banana muffins from this recipe for Josh to eat for breakfast this week:

And I used this recipe to make Oat Bran Chocolate Chip cookies (I used smart balance instead of butter, egg whites instead of an egg, and I made a half batch):

Originally, I was going to use this recipe and make beef and broccoli over brown rice for dinner, but neither Josh nor I wanted rice and I didn't want any beef. I followed the recipe, but instead of rice, I just added broccoli slaw and chickpeas to the mix. I gave Josh all of the beef ;). Josh's bowl:

I need to try to memorize some Body Step choreography tonight!! How is your week looking?

My daughter and I made granola too! Isn't it easy?

Wow, you got a lot done. My weekend wasn't nearly as productive, but it was relaxing, so that's good!

One busy night in the kitchen! I love homemade granola! I bet your house smelled amazing with all those baked goods. Did the broccoli stench get through? :)

My week is looking pretty much the same as last week, but hopefully things will pick up. Hope you have a good week Erica. Good luck memorizing your choreography tonight. Are you loving the Bumble Bars?

My first comment didn't save! Oh well, I just wanted to say that I am amazed by all the goodies you made today! The banana muffins are my personal favorites :o)

My week should be busy as usual! But just so you know, I'm rooting for the Cardinals next week ;o) Nothing personal, girly! My brother is a devoted fan ever since my family moved to AZ. I gotta jump on the bandwagon! It will be a friendly competition, haha.

stupid eagles (the giants are my long-time fav)... but i'll root for them here on out.... grr, it was pretty ugly. but they did play well.

ANYWAYS, have you tried foodblogsearch.com? i was thinking of your "oat bran" search...

dinner looks great too :) and i have yet to make granola!!

Funny, I made granola today too...but yours looks better! My week is looking the same as last week but it will be a full week without Thursday off...

Body step is my favorite class, it's so fun but i tend to always feel uncoordinated at the beginning lol!
Have fun learning the new routine, my week is looking very relaxing...

All your food looks great! I think it's fun to bake and cook a bunch on a day off : ) We had some quinoa for the first time tonight, that was fun to try. Week is looking all right, but it has come too fast, as always!

yea those are the one's offered at my gym, i've taken attack- which is an awesome workout
i've done bodyjam, it was a bit too easy though
I also tried out bodyvive, the one with the little ball i thought it was a pretty good class but it got canceled
I've never tried pump though, those huge weights look to intimidating for me, though I hear it's a great workout!
I just find bodystep hard but still really fun that's why i love it!

Love all that baking!! And with Smart Balance too!?!?! I should totally work for them because I pretty much use it in everything instead of butter...

I've got a pretty typical work week ahead of me, then a 4 day weekend because Monday is a holiday and we are off for the inauguration. :) I'm going to head to Raleigh on Saturday to visit a friend.

I am excited for my january too! I would get upset when Jack would first do it- and it still bothers me- but at his parents house , its about 6 acres of woods that go down to a lake. Jack will circle the house, kinda checking in, but never listening to us to come in. I get more upset at home because our streets are wayyy busier!

Your the second person I've seen make stir fry. I like the idea of chickpeas in it, I may have to make a version of it this week.

My week is unfortuatnely going to be just as busy as last week at work. I'm living for the weekends. Luckily Caitlin comes home this week. Yippee!!

I love homemade granola, it is the best! Everything else looks tasty too! The week is busy for me at work. I have a presentation tomorrow, I am talking about healthy cooking and healthy lunch options for work...so I am making my black bean soup for them to sample!! I will be busy tonight cooking! I’m normally not in the mood for beef, but I’ve been craving it lately. I know my immune system could use a little boost, and who know I may be low on iron. Beef and broccoli sounds delicious. I just realized I’m hungry.
