Baking Up a Storm

Happy weekend! Hope you're enjoying it. Last night, Josh and I ran out and picked up some food from a local deli. Josh got a pulled pork sammy and I made a monster salad from the salad bar. Unfortunately, I dropped half of it on the ground while getting out of the car when we got home (yikes!)...so hence no post last night. Two of our friends also came over and we had a relaxing night of movie watching.

Early this AM, I was at the gym for our Fitness Challenge day. The group fitness instructors put on the the beep test, 45 minutes of Body Step, 45 minutes of Body Pump, 30 minutes of Body Combat, Body Jam, and Body Flow! I coached and completed the beep test, taught part of Body Step, took Body Pump, and stayed for half of Combat. It was a fabulous workout but TOTALLY exhausting ;). Then I went food shopping and came home for some baking.

A fellow instructors 40th birthday party is tonight and I decided to make her up some home baked goodness including pumpkin muffins (getting sick of seeing these yet ;)):
And Big Oatmeal Chocolate Chip Cookies:
I also prepped up some of my favorite 101 cookbooks pizza dough:
For the rest of the afternoon/evening, I plan to watch football (LETS GO PENN STATE!), relax, make dinner, and then we're headed into Charleston for the birthday party. Have a nice one!!

I'll never get sick of seeing pumpkin muffins ;-)

Food dropped on ground/floor outside of home requires one second rule, not 5 seconds. Sorry you missed the cutoff. If you were greedier, you would have been faster. :(

OMG I probably would have cried if I'd dropped half my salad on the ground!

Sounds like a lovely fall weekend - baking, birthday celebrations and football. Don't drop those muffins!

Yay for baking! And those muffins must be really good!

Thanks for getting back about the baked oatmeal question!! I prob would miss the 'original' texture of oats as well.

I made your pumpkin muffins today and they are a big hit at my house. Yesterday my girls were at a party and had a treat that was like a brownie bite but was half brownie and half blondie - they said these muffins were way better than those and that they tasted like cookies. I see plenty of these being made!
The ingredients say whole wheat flour and the instructions said whole wheat pastry flour. I was not sure which you actually used. I did not have quite enough ww pastry flour so used a combination of both. Still turned out excellent! Thank you for sharing your great recipes!

Lori- thank you so much for the feedback :) Glad they were enjoyed!!! I will up date the recipe- I use whole wheat flour but either (obviously!) works great ;) Hope you're having a nice week
