Peanut, Peanut butter

Decisions, decisions! Today went well. Work seemed to fly right on by. I came home and took care of Franky and prepped dinner. Peanut Noodles with chicken and broccoli slaw for Josh:


And then for me, I cooked up the remainder of my acorn squash and mixed it with tomato, broccoli slaw and green pepper and topped it all with marinutta sauce:


On the side I had a delicious apple:

and pumpkin mixed with honey (no picture). Once I was finished with my prep, I finished up some laundry and headed out the door to WFs to pick up a few things and then taught Body Attack.

I'm excited that my teaching schedule is lighter this week so I can focus on running a bit more. My plan looks as follows:

Monday: 2 mile run, 1 mile walk, 45 minute spin (done!)
Tuesday: Teach Body Attack (done!)
Wednesday: 11 mile long run (if it stops raining- fingers crossed!!)
Thursday: Body Pump
Friday: 6 mile comfortable run or off
Saturday: Teach Body Step
Sunday: 6 mile comfortable run or off (depends what I do on Friday)

I am telling you, if you want good hiking, Utah is your place:) The arches and red rock are amazing!

We got SNOW today. So no running for me, sad. I hate the cold! So I will be doing my elliptical this week and strength training. Maybe some yoga too!

I am taking pilates classes all weekend; I can't wait!!

Love cold peanut noodles!! I used my peanut sauce on brown rice tonight--soo good!

My gym is doing a Bosu class on Thursday which I am planning to check out - have done some kickboxing moves on the bosu and love it (tough though!) so I am excited about this one :) Hopefully I can get outta work in time to make it there...!!

i've come to discover spin class as one of my favorites. i go all the time adn always feel like i've gotten my butt handed to me!

Wow - 11 miles in the rain! If it's not cold and I'm in the right mood, running in the rain is fun - if it IS cold and I'm not feeling it, no way I'm going out there. I definitely recommend running with a baseball cap if you decide to go - it keeps you from having to wipe the rain from your eyes every two seconds!

i'm all about italy. hiking cinque terre is amazing, and in three hours on the train, you can be in switzerland in the jungfrau region. lauterbrunnen and murren are probably the two most gorgeous towns in the entire world, and they are FULL of hiking and outdoor activities. i loooooove italy and switzerland. two best places on earth!!

Veggies with marinara is a personal favorite but I neeeeeed to try the marinutta sauce soon.

I totally forgot about the Keys when I saw the list. I LOVE the Keys. And it would for sure be warm if not hot that time of year! Plus, the water is so clear...I can't wait to see where you choose!

I would tell you to pop into Minnesota for vacation and then we could chat-but MN sucks, so def go somewhere warm! I love Clearwater Beach FL. It's such an ideal spot.

I can attest to the Berkshires! My parents have a cottage there, yes it's nice and all, but might be a bit boring. I think you should do a caribbean vacation as there are way more sport-like activities/sightseeing to do. Berkshires is kind of a weekend thing, you know, it can all get done in 2-3 days.

ohh so many great places on that list!! I do live in MA so I have to give a big shout out to the berkshires, it is so utterly beautuifyul there with so many things to do like go on walks, hikes, organic eaterys...oh it is just so fun! but i am sure any place you choose will be great!!

So funny, your and Josh's dinners are the same as Ray's and mine- completely different! I don't know what I'll do when I'm cooking for more than one other person, it's going to get crazy!!

i just found your blog and oh my gosh! I think you are my twin!!! haha. Your work-out plan is almost identical to mine every week! (Except for the fact that its verrry hard to drag my butt out the door to spin! haha)
