11 miles & "Nachos"

Hey ladies & gentlemen! You’ve got some rocking workouts planned for this week! I hope you enjoy them. Since I was working from home today, I got up extra early to fuel and start working. I took a break mid morning to do my long run-11 miles!!! The run went pretty well. It is 80 degrees and humid in SC today (and almost November ;))….so that made it a little tougher! I did refuel at mile 8 with 1 shot blok (I wanted to start slow and not upset my tummy).

It gave me tons of energy and I will definitely be using these in the future. For some reason my HRM was slipping off during the last 4 miles so my calorie count is way out of whack (I looked down several times and noticed my HR was recording at 64 haha). Oh well- the time is correct and that’s the stat that matters ;):

After work today, there was lots of cleaning, a few errands, and then dinner. Josh ended up having a dinner meeting last night, so he ate the Peanut Noodles I prepped last night, tonight.

For me, I made a plate of “nachos”. I cut up a jicama into chip like pieces and cooked them up. Then I topped them with beans, salsa, bell peppers, tomatoes and part skim cheese and put them back in the oven for a few more minutes to heat up. When they came out, I put a little sour cream on top. The result:

Ohhhh yah. I also (of course!) had a big ole plate of fruit on the side. Now its World Series time!! Do you plan to watch any of the games?

Great job on the 11 mile run! I love the idea of the jicama as your chips! Brilliant! I really need to remember this. :)

Awesome job on the 11 miles!! I have that exact same HRM - in black too! You probably just need to tighten the chest strap back up. Mine does the exact same thing. Hate it when it does that...

Those nachos look wonderful!

Congrats on your hard core run.. I would be like wearing a sign telling everyone if I ever ran that far!

My sister in law is going to the phillys world series game... she has the type of job that hooks her up with all kindsa tickets. Must be nice.. lol :)

PS.. love that you used some jiacama.. what a great root veggie.

I've never had jicama. I totally need to.

Nice run! And how do you cook the jicama? Does it taste different than raw? I love nachos and would love an alternative to chips.

Sarah @ The Foodie Diaries said...

I love jicama in salads! I've never thought to bake them though! I'll definitely try this! PS got the yoga mat yesterday and I love it :)

Nice job on the run!

I love your take on 'nachos'. It is always fun to find new ways to make unhealthy dishes a bit healthier.

I'm not a huge baseball fan. But if it were my hometown team, I would definitely be watching!

Wow!! Way to go! 11 miles is a huge accomplishment!

80 and humid? I may complain about the winter here but I have to say, that is NOT October weather in my mind ;)

That nacho idea is genius!! I still need to try jicama. It sounds wonderful!

Great job on the long run today. I haven't done more than 10 miles in a few weeks and I have a 10 miler planned for Friday. We'll see how it goes.

So how do you feel about jicama? I'm not really sure if I would rave about this root veggie. I mean I definitely wouldn't turn it down, but I don't think I would choose this as my first choice. I love the idea of "chips" to make the nachos though.

Hope you had a great day hun!

SHUTUUUP! the SAME thing was happening to me today and yesterday with my HRM! with 64 heart rate too! I was sprinting during spin and I was like uuuh there's no way.

that's a killer run you had! I'm so excited for you that you got it in and got GREAT time :) woo hoo!

I love jicama!! Brilliant idea for din girl :) I've had it before dipped in a sauce made of apricot jam, hot sauce & lime juice - sounds crazy but it is SO GOOD! Have a great night girlie.

Your nachos look fab!! Great idea :)

I'm boycotting the World Series because I want Glee to be on! (I'd be singing a totally different song if my Rays were in it though, lol). Have a great night!

Deirdre said...

Yes, I will be watching. I'm a huge baseball fan so even though I don't like either team I'm gonna watch all of the games.

AWEsome job on the run, girlie - especially in the heat!! mmm - aren't those shot bloks the BEST? I know they stick to your teeth a bit but it is so.worth.it.

I'm not really a Phillies fan or Yankees, but I do love to watch! I suppose I'll root for the Phillies since they're the underdogs and I do love a good underdog. :-)

What a fun twist on nachos! Great TV/Movie food

That is amazing that you can run that far...fantastic job! Just out of curiosity, for how long have you been a runner?

Kris said...

I have never had jicama! What does it taste like? It looks great and I should really step out and try this :)

Esi said...

Wow, you're really building up your runs! I just started doing interval runs...I can run for like 5 mins max. HAHA! Anyway, love the jicama nachos. I'm not watching the world series. Baseball bores me unless I am at a game with a beer!

The Voracious Vegan said...

It is still in the 90s here in Saudi so too hot to do anything outside but walk, really! I'm still stuck in the gym for another month or so. But after that I'll be running outside like you....although not for 11 miles! That is quite a distance, congratulations!

Alison said...

11 miles WOOT WOOT! Yes, you definitely burned more than 650 calories with that one! Way to go - I love that post long run feeling, awesome stuff!

I am gonna have to try those nachos, they look so yummy! I love taking something that is "bad" for you and making it healthy! Great job on the run. I hate it when my HRM gets out of wack! Mine usually slips when I am really sweaty.

CaSaundraLeigh said...

11 miles!! I can't even imagine that--just the thought is making me tired =)

I really love how you subbed jimaca for the chips--I actually don't like tortilla chips, so this would work out great for me!

Samma said...

Your nachos look great! I don't paln on watching any of the games, but I am mad that Glee is pushed back to November!

Therese said...

You are getting to be so speedy! You are going to rock your race :)

Make sure your heartrate monitor strap is on super tight. It's suuposed to be so tight it's almost uncomfortable so that when you warm up and start sweating it stays put.

Krista said...

Liking those nachos!! Great run, too. I'm very jealous of the heat you guys still have!

The only sports game that makes it on to out TV is hockey...

vanillasugarblog said...

I NEED to try those shot blocks! Do they have soy in them? Please say no.
11 miles...you GrOw girl.

jenna said...

yum! your 'nachos' look fabulous!! I need to find some jicama!!!

Molly said...

I haven't tried jicama yet, but it looks delicious!
Congrats on your work-out! Too bad about your HRM - I've been going for years with the same $15 target watch so I'm definitely jealous!

Yum Yucky said...

How about this: I eat the Nachos and YOU run the 11 miles. That way, it's teamwork. Yes?

vanillasugarblog said...

thank you for that link. these are right up my alley--no soy thank goodness. I hope my health food store has them.

Heather said...

Gosh I used to live right near Fenway Park and it was a shame because I am so not a baseball fan! Neither is my husband, I guess we're lucky to have found each other!

Btw if your heart rate says 64 again...better get that looked at :-)
