Product Review: V8 Southwestern Corn Soup

Hi all! Today was my second "first" day at the company, my first day in the Charleston office. I arrived pretty early to meet my new mentor who is so much fun! She is preggers and will only be available to mentor me for a few weeks before she goes on maternity leave, but I'm glad to have a cool mentor for at least the first couple weeks! (On a side note, my mentor is preggers, the girl at the gym who teaches turbo is preggers, I saw like three preggers in the food store the other day....there must be something in the water down here...haha, I will not catch it!).

Any who, after work, I came home and practiced the new Turbo Kick for an hour while baking up some bread. Then I ran to the gym with Josh and did about a half hour on the Elliptical.

When we got home, I tried this soup....

I added in lima beans and peas and can I say...this soup is awesome! Its spicy and totally delicious! I find with most corn soups, all of the corn is usually blended in and unrecognizable. There are tons of kernels in this soup and so much flavor! Josh loved it as well! There are other flavors too- check it out! I might give the butternut squash a whirl next!

I served my soup with brown bread and pears....

Any who, time for some dancing with the stars , football, baseball, and the hills (those all sound like they go together so well hahaha). Have a lovely night!

I've been wanting to try those soups...and I love spicy, so I'll have to next time I'm at the g-store.

Here's the pumpkin pancakes recipe: http://pinchmysalt.com/2007/10/14/my-recipe-for-whole-wheat-pumpkin-pancakes/. I doubled the recipe and used a whole of pumpkin and I loved it. I even think you could bump up the spices and the sugar a bit, too. For more of a treat. :)

Mmmm...I've never had corn soup, either. I will definitely be trying this! Soup is the one reason I don't mind the weather getting a bit chilly. I had it yesterday and it was 80 degrees out. Felt kinda weird. :-)

Sounds like a balanced night of television to me! I need to catch up on "The Hills" episodes!
