Blogger Week #7: Chickpea Pasta (LAST DAY!!)

I can't believe it is already the last day of blogger week! First a little jibber jabber about my day- work went pretty well, I came home and did the usual (walk with the Frankster, ironed, did laundry, etc) and then ran and went to take Turbo. There is only ONE turbo class down here and the girl who teaches it is pregnant so I may be subbing for her during her maternity leave! Unfortunately, no one showed up to her class :( Like I told you, Turbo is not big down here. So instead, I practice Body Step for 40ish minutes and worked up quite the sweat!

Onto dinner- thanks to VeggieGirl, I have started to explore a lot of the great vegan blogs out there. For my last recipe for blogger week, I used a vegan recipe from an awesome Blog: Your Vegan Mom. The only change I made to this recipe was to add some additional vegis.

Ingredients:


1 onion, diced
1 bunch chard, roughly shredded
1 1/2 c. cooked chickpeas
1 c. chickpea broth (if you don't have any chickpea broth, use pasta water or vegetable broth)
about 1 T. lemon juice
4 cloves garlic
red chili flakes to taste
1 - 2 T. olive oil
about 2/3 bag pasta



Directions:



Brown onion in olive oil. Add minced garlic and chili flakes and cook for a few seconds, just until fragrant. Add the swiss chard, chickpeas, broth, and salt. Cover and simmer until the swiss chard is wilted. Add lemon juice. Toss with cooked pasta and enjoy.

i have really enjoyed this blogger week, erica! such a great idea. i also never thought i would cook vegan food until i discovered all these great blogs - now i love my v'con, eveyday vegan & ED&BV cookbooks :D

Happy almost Halloween!! Simple yet yummy looks really really good. I'm going big for Halloween weekend. Having a little gathering tomorrow and then the West Hollywood Carnivale. Birthday party on Saturday. Woo, exhausting, but fun!!

Bummer about Turbo...I'm sure it's only a matter of time before word spreads of its awesomeness -- especially if you're teaching it!

I'm dressing up as a flapper for Halloween and we're going out. The hubby is going as one of the Beastie Boys from the Sabotage video. lol.

I just used post three times in a sentence! But here it is! I know you can make it even better than I did...in which case I'll have to steal the recipe from you. :)

mi and Erica - The lentil burger! I wish I had an exact recipe, but I don’t. I just threw stuff together in my mini-blender and kept poking it to see if it felt right. :) Crazy, right? So I used 1/2 cup of lentils - I know that much for sure - then added egg whites, carrots, onion (green AND white because I’m an onion freak), garlic, a blob of dijon, and some bread crumbs. OH, and lots of pepper and some greek seasoning. Then I pulsed it lots in the blender and made a little patty. It was really fun!

Hey friend, the chickpea pasta looks delicious! Chickpeas are my favorite bean by far but I never think about having them with pasta.

Easy to make pumpkin oatmeal for one, but I highly recommend making the double and saving the other portion for the next day. It's working out great for me during the work week.

We're having two couples over tomorrow night, for some autumn appetizers while we hand out candy. We're dressing up too; our street is craaazzy on Halloween! I'm dressing as a gypsy, at night and for work too.

Mmmm...chick peas! I first discovered them in college and now I'm in love.

I am going to try really hard to fix up something for the BSI, but I am watching my niece and nephew this weekend...maybe they can help? ;-)

yummy. i love chickpeas. they taste perfect straight out of the can... which is usually how i eat them. i can only imagine how they taste with some pasta.
