Fresh Express Fall Slaw

Happy Wednesday! I hope your week has been treating you well. Couple quick & exciting blog-related items:

Recently, I received coupons from Food Buzz & Fresh Express to test out some of the varieties of Fresh Express bagged salad blends (disclaimer: I received the coupons for free). When perusing their selection in my local grocery store, I noticed they had a few different varieties of coleslaw. fallslaw 003

I really enjoy a vinegar based coleslaw and thought its a shame that coleslaw seems to disappear at the end of summer.  So, I decided to make a more fall-ish version of the traditional summer picnic dish. The fun part about this recipe is that you can adjust the vegetables & vinegars used and even play around with the add ins (I think dried cranberries, sunflower or pumpkin seeds, or pecans would also make great toppers).

Fall Slaw

Ingredients:

  • 1 lb fresh Brussels sprouts, cut in half
  • 2 sweet potatoes, cut into pieces (~ the size of the cut Brussels sprouts)
  • 1-2 tablespoons olive oil
  • 4 tablespoons balsamic vinegar
  • 4 tablespoons honey
  • Salt & pepper (if desired)
  • 1 bag Fresh Express 3 Color Deli Cole Slaw blend
  • 2 medium/large apples, chopped
  • ¼ cup chopped walnuts

Directions:

Preheat oven to 425.

Mix cut Brussels sprouts and sweet potato with olive oil. Place vegetables onto a non stick cookie sheet and roast for ~30 minutes (turn once and check throughout).

In a large bowl, whisk together balsamic vinegar, honey and salt & pepper to taste. Add cooked vegetables, coleslaw blend and apples. Chill for at least an hour and top with walnuts (or additional favorites) before serving.

I usually hate coleslaw, but I think that I would actually eat that one. I dispise mayo based coleslaws. They seriously make me want to gag, but my husband loves them. Needless to say, he has to wait until his mom comes to town to get some homemade. Your Franky is so cute!!!! I love those lips!

oh i LOVE this recipe! i love fall foods haha i can't deny it. i bet that would be super yummy with some b-nut squash soup on the side or even in there! mmm :)

i'm so excited to hear what the surprises are! i think you should share NOW. oh and whatever the changes are there still better be some serious parfait action. well unless you plan on moving to long island then we'll find a new charleston cafe haha

I love coleslaw but it has to have a vinegar base. I'm just not a fan of anything creamy....

I just saw a recipe today for a Honey Goat Cheese Butternut Squash Slaw that sounded fantastic. I never really liked coleslaw until I branched out of the regular kind of just cabbage and mayo. There are so many varieties!

So what was in the bag, just shredded cabbage? I like a vinegar slaw best too. My days of working as a waitress really turned me off to typical restaurant mayo slaw :-)

and i use mayo (vegan) and apple cider vinegar + sugar to make the best cole slaw dressing ever. So BOTH mayo and vinegar :)

oh my gosh that looks amazing! So creative Erica!! I love coleslaw, but I'm more of a vinegar based girl. I rarely like a lot of mayo in anything. I had the best slaw at the this little lunch shop by my parents, wish I had the recipe to recreate it!

This sounds SO good! I always thought I hated coleslaw, mostly because I only knew the soggy kind in diners that's dripping with mayo, and I am not a fan of mayo! This I could get down with, though. I like the idea of adding some dried fruit and nuts too!

You know it's funny, I grew up HATING coleslaw. But recently I tried some at a restaurant and LOVED it! Of course I don't know if it was mayo based or vinegar... ;-)

I am so curious about the big change! I got those fresh express coupons so I need to keep this post in mind. I actually always hated coleslaw but that was because I didn't know what GOOD coleslaw tasted like. Now I love it! I also love Frank's lips.

I've never made roasted brussel sprouts? I usually steam or stir fry them.

Trader Joe's had a sampling of coleslaw recently and it was equal mayo/vinegar and it was tasty. The mayo was olive oil based.

I always buy coleslaw mix with the intention of making a coleslaw but for some reason I end up using it as a salad instead or using it for cabbage stir-fry.
