Liberty Tap Room & Body Pump Launch

Hey All! Couple quick things- First: thank you so much for your sweet words on my last post. For those of you who asked about Cashew Cream, a recipe can be found here (note: I never make a batch this large, you can make any size you want/need). If you prefer (and are not vegan), you can utilize regular cream in a 1:1 ratio in its place.

Second, a lot of you shared some great recipes that you made this past week, so I figured I’d pass a few of them along:

Have you been enjoying your weekend? I certainly have. On Friday night, my husband and I and two of our friends visited Liberty Tap Room in Mount Pleasant. Josh's Beer Sampler:I had emailed the restaurant requesting they add some vegetarian options to their menu and the Manager told me the Chef would be happy to prepare anything I wanted!! Both the Manager and Chef were incredible and my dinner was out of this world (the pictures don’t even do it justice). First, the Chef made me a “tour of world,” which included a Southern Slaw with Pimento Cheese, an Italian cheese and tomato stack, a Seaweed salad (never had this=so so good), and a South of the Border spicy tomato salad.



He also made me an incredible plate of roasted root vegetables.

After, we headed to our friends house for a movie.

On Saturday, I taught Body Step and we launched the new Body Pump. The class was PACKED and we even had to turn some folks away. Here are some pictures (all of the instructors minus one):

The rest of the day was spent on my to dos (food shopping, Frank bath, cleaned the house, did laundry/ironing, worked on more choreography):

Today, I plan to relaxxxxxxx and do some more choreography work. What are you up to??

Hey! Do you know if everyone is on the same "schedule" for pump? Am I doing the same class you are teaching? They did a new launch last weekend. I am loving it. Great squats and biceps! I can't get enough of Pump and Combat. I haven't tried step yet. I am not really a step fan, but maybe I will try it:)
How do you stay "fueled" before and after class? I love the workouts but need to make sure I am fueling my body properly. Thanks Erica! I wish I could take a class from you! Enjoy the rest of your weekend!

I love when restaurants go above and beyond. It really shows that the chef is talented, not that he can just follow a recipe.

Thanks for posting my link! :) I hope you like the 3 bean salad. It's been a big hit with my friends, and one has already gotten ingredients to make more at home!

I'm supposed to be going to a practice for our zumba group who is dancing with the Bobcats at a game in February! But, since my leg is bugging me, I think I'll catch the next one and rest up.

Hey hey hey! Looks like you had a great dinner, that's def the sign of a good restaurant to cater to their customers needs :) So cool!

As for this weekend, we just got back from our cruise and I'm trying to piece my life back together before a full work week (gasp, I dread!) begins tomorrow... happy sunday!

That is so cool that you had a customized meal! I wish more places would do this. Just the other day, I was telling my friend how sad it is that hardly ANY places around here have tofu or even ANY vegetarian options on their menu. Ugh, the shame. That is why I usually just stay home, but it's so nice to be able to go out and actually enjoy the meal.

Glad you had a great time. And the class sounds wonderful! ;)

Today I've spent the morning cleaning the fridge and organizing messy cupboards. I hope to get some shopping in but I may end up relaxing on the couch... still feeling a bit tired from the 10 miler yesterday.

seaweed salad is SO GOOD for you. I am ok with it, but eat it because it is packed with nutrients and amazingly good for your immune system, thyroid, oh I could go on and on....

hey girl! your weekend sounds so fun :) i love that you emailed the restaurant to find out if they could add some options! i would never think to do that and how awesome of them to be so accomodating. seaweed salad is seriously one of my favorite things in the WHOLE world!! do i sense a new addiction for youuuu?

I am so impressed with that restaurant for accommodating you! Not that vegetarian food was an unreasonable request, hello! Haha. Looks like it was amazing though. I realize I take veg options for granted in NYC, even at burger joints!

and i LOVE the pictures of your body pump class! i used to take that class when i was at another gym and LOVED it, because i am not good at doing weights on my own.

We love getting beer samplers. Such a great way to try lots of flavors. How great that the restaurant was so flexible. Definite points in my book. I would love to take one of your classes sometime. You look great up there!

we had a body pump release at my gym this past weekend! it was s half hour class that was a intro, taught the basic moves etc. it looked great! lots of attendees

Wow, how neat that the chef was able to make things for you! I'm seeing more veg items pop up on menus, and it just excites me so much. I LOVE the variety.
