Domino's Berry Special Muffin

Happy weekend! Josh’s parents are here visiting, so we have been running around doing all kinds of fun stuff . As I’ve told you before, whenever people visit, I like to have some good “counter snacks” laying around. That way, if anyone gets hungry, they can have easy access to food. Lucky for me, the people at Domino’s sugar had sent me a gift card to use to buy ingredients so I could try some of the recipes on their website.

I decided to try their Berry Special Muffins Recipe. Since I was running low on AP flour, I used half all purpose, half whole wheat. I also went without the topping to keep them a touch lighter. The outcome- just beautiful! They’re almost crunchy on the outside and soft on the inside:

I also made up some of my own granola (oats, coconut, sunflower seeds, walnuts, flax, honey, and a little oil baked at 250 for 1 hour. I also added in some dried cherries after cooking):

I got lots of fruit and yogurt to mix with the granola- yum!

For their arrival, I also made up Broccoli Hut’s awesome artichoke hummus and this spicy hummus. I had made these for Christmas previously and had cooked up my own chickpeas. This time, I used canned chickpeas and the outcome was a lot smoother!


I also set out some fresh fruit and veggies.

That granola looks so good! I may have to make some when I go home for spring break and bring it back to school with me!

Your counter snacks are making me hungry! :D I love that you put so much effot into your snacks instead of just putting out chips, pretzels, etc. It must be tasty to stay at your house! haha

Glad you got the bars. The company said they might be emailing you, so lookout for that. I'm not really sure what they are doing though... lol

Wow - what a spread! That is a great idea to have snackies ready for guests. I always feel guilty because I don't keep much snack food around (huh, my guests don't want apples and greek yogurt for a snack? LOL). Those muffins especially look yummy!

I'm most excited for the Colts game tomorrow - and going out with some of my girl friends tonight!

I like cooking my own garbonzo beans but you really have to soak them a long time and after cooking let them set in the water for a while. Then they make smooth hummus:)

I love that you like to have counter snacks out for guests. Whenever I have company over, I like to have something on hand besides chips - like cookies, muffins, or fruit.

Counter snacks are also something I like to have. That way I can concentrate on entertaining rather than cooking.

Interesting to know that your hummus came out smoother with canned chickpeas! I have yet to attempt homemade hummus, but would have guessed the opposite. Maybe I won't bother boiling my own beans when I get around to doing it!

Purchasing memory is such a big hassle... You have to search online for prices, filter through which ones are legit, go out to a bunch of electronics shops,compare prices, finally buy your memory, and then hope that the price doesn't fall in the next month or so.

I've been done in by some ridiculous price drops in the past... especially this one time when I bought a Micro SD card for my R4 gaming flash card at what apparently was a steal, only to later see that it had dropped by five bucks in a week's time.
