Body Step Launch & Easy Vegetarian Mexican

Hey All! Hope you're having an enjoyable week thus far. Yesterday night, we launched the new Body Step. It is a fun and FAST release. Few pictures from the launch:


I just finished up work and prepped our dinner for tonight, easy vegetarian quesadillas and "refried" black beans. For the quesadillas, I defrosted frozen corn and mixed it with black beans and chili powder:

I grabbed a bag of 2% milk cheddar cheese:


I then sprayed 1 tortilla with cooking spray and placed it on a hot skillet. I topped the tortilla with the cheese and then the corn/bean mixture. I sprayed a second tortilla and placed it on top of the mess, sprayed side up:

Cook until brown, flip, cook other side until brown. Remove from heat and cut into triangles.

I will serve the quesadillas with salsa and "refried" black beans. For the beans, I cooked up some chopped onions. I then tossed some partially drained, partially smashed (courtesy of my magic bullet) black beans, 1 teaspoon of chili powder and 1 teaspoon of cumin into the pan. Cook over low heat for ~ 5 minutes. The result:


Deliciousness! Now, I'm off to teach Body Attack. How is your week going in terms of workouts? Have you decided to try out something new this year? I encourage all of you to give group fitness classes a try! They basically give you a built in set of workout buddies, a trainer, and they can be tons of fun! Experiment with different classes and instructors. Let me know if you find one that you like, My workout week is shaping up as follows:
  • Monday: Taught Body Pump and team taught new Body Step
  • Tuesday: Teach Body Attack
  • Wednesday: Off
  • Thursday: Teach 45 minute Body Step and 45 minute Body Pump
  • Friday: Teach Body Attack
  • Saturday: Teach Body Step and Body Pump
  • Sunday: Off

I make the same on a tortilla wrap as a snack all the time!! I love the cheesy, bean + corn mix. So yummy! Have a great night darling! :)

pa pa pa paleaaaase come to ny and teach classes here :) i would sign up for any gym you were teaching in haha. we don't have anything cool like body step or body attack. the best we have is spin and some boot camp style classes that are taught by whack instructors. no good workout there.

i'm so excited for you that body step is going so well! keep it up girl :)

I love love love group exercise classes but don't belong to a gym anymore so I miss out on them :( It would rock to take a class from you! I've never tried out any of the classes you teach (I actually hadn't even heard of them til your blog! :o)

I make my own refried beans the same way! I've only made them with pinto beans but black beans would be a delish variation.

Oh YUM!! That looks similar to my breakfast calzone, minus the egg! Delish!! :) I just love the combo of the black beans and corn. So good!!

I used to love group fitness classes when I was a gym member. So much fun!! :)

Gotta love mexican food!
I love doing my weight training in groups, especially since I could talk for days about running but have no clue about weight training. Unfortunately my schedule only allows me to take those classes in the summer, so I'm on my own for a few more months.

Those quesadillas look very tasty. My gym is having a Triple Challenge Saturday morning. If we attend all three launches of Body Attack, Body Pump and Body Combat we can enter a drawing to win all sorts of prizes. It's also a benefit for St. Jude's children's hospital. I'm excited and figure if I'm going to burn my body, it may as well be for a good cause!

Wow...what an easy and yummy meal!!! And the best part is, I have all of those things already in my fridge. ;-)

I want my gym to get Body Pump/Step classes SO badly. I might look into guest passes at nearby gyms that offer those classes. You just always make it sound so fun!!

The quesadillas looks awesome! I just love mexican, especially quesadillas. Have you ever tried the Cooking Light, Shredded Zucchini and Olive Quesadillas? They are probably my favorite!!!

I love group fitness classes, they are so much fun! My favorite is this advanced step class at my gym that is full of lots of choreography and dance-type moves. It's a great workout. :)

I sometimes get intimidated by group classes. I know that it is silly, but I hate the feeling of others judging me and my fitness level. Silly, I know. Especially because every group fitness class I have been to is great!

I wish you taught here. I bet you're so fun and motivating!
Workouts have been great this week! On Sunday I did a bootcamp class, then on Monday I did a pilates DVD. Yesterday I just did cardio back and biceps. I love being able to walk Brody too. It's nice to get out and about!

I love your creation. I am still trying to find a gluten free alternative to tortillas. Rice is okay but they smell a tad weird to me.

Love the refried black beans. Workouts are great this week. Keeping up with the 1/2 marathon training. Perhaps sometime in the future I'll get back to a gym membership and take part in classes again, maybe even get back into teaching them. I'm thinking about it. :)

Hi Erica! Don't apologize for being a bad commenter, it seems to be a trend with me lately as well! Seems after a month of vacation things get somewhat scattered. Thankfully I am returning to more of a schedule!

I have been craving Mexican food for awhile now, I am going to go out to a new Mexican place sometime next week with some pals. :-)

Hi Itzy! :) I have a question: I have recently started Body Pump (which I LOVE LOVE LOVE!!) and was wondering about the weights. Ideally, I would like to be toned, but not big -- i.e. I'm a long distance runner and can't afford to have ginormo biceps. However, what happens when the weights I'm using at Body Pump start to get too easy? Keep using them? Or go heavier? As an instructor, I would love to know what you recommend. Thanks in advance! Happy New Year!
