Corn Bisque

The rest of tonight should be rather uneventful- a nice lazy Sunday evening :) I made a very easy dinner tonight, inspired by Caitlin. I took an organic bisque and added peas, corn and black beans (I also added grilled chicken to Josh's soup). I served the bisque with the vegan cornbread I made made earlier and apple slices.

I really enjoyed the cornbread. Josh wasn't a huge fan. It is very basic cornbread, not sweet! The plan for tomorrow is to get to work a little early so I can take off early. I then will be launching the new Turbo Kick, hopefully going to Josh's softball game and then driving up to hotel I will be staying at during training. What is your week looking like?

Yum, that corn bisque sounds great. I really can't wait until I get back to school and can make bulk soups in the crock pot!

Hope you have a great week, Erica! Best of luck with the training, too!
