Turkey Meatballs & Lots of Veggies

Monday, Monday!

First order of Business- Thank you all for the kind words on my post yesterday! I was amazed by the number of you who were sweet enough to leave me your thoughts/offer support…your comments kept me smiling all day. Sunday was a roughhhh day and I’m glad its over (and even more glad that Josh is ok).

Second, the winner of the Chobani yogurt is (based on a random number generator)….Katie!!! Please send an email with your address to itzyskitchen at gmail dot com and I will have your Chobani sent out to you!

How was your day? Mine was actually very nice. My manager was sweet enough to let me work from home (after my emotionally draining Sunday). As a result, I was able to get up and get a run in before starting my day. I did a quick 2.5 miles outside then showered and started on work. When work was through, I headed to the gym for a 45 minute spin class. It was just as fabulous as last Monday! Then I ran some errands.

For dinner tonight, I made Josh some of Ellie Krieger’s turkey meatballs and put them on a sub roll with some provolone cheese. He had a side of broccoli and cantaloupe:

I had been doing a lot of nibbling prior to dinner (crackers and nut butter), so I just ended up having a salad of romaine, steamed broccoli, red bell pepper, pinto beans and salsa. I also had a LARGE side of cantaloupe (not pictured):

Josh and I are going to go watch a movie. What are you up to tonight?

I am so glad to hear that Josh is okay. Oh my gosh, my heart went out to you guys after I read what happened.

I am sure you needed that nice break from work and I bet a refreshing run felt great. I love how freeing a run can be to clear my anxious mind.

I made these turkey meatballs before for my hubby too, he loved them! I think I am going to make them again soon but try tofu?

I have been meaning to ask you this but I keep forgetting and totally missing it on your blog. Are you a vegetarian/vegan?

What am I up to tonight, truthfully? Sitting on the couch with a friend, reading the atlas. Yes, we read maps for fun. You learn so much!

Ah yes, I needed that picturesque inspiration. My food choices have been pure trash lately, but I do have turkey burger from the Amish people, so I'll hook it!

Hmmmm that sammie and salad both look amazing! ugh- I wish I could chew! I never realized how everything tastes so much better after you chew it.

Jeff got back sunday night and he just left again today (tuesday)!
So I got to spend all night monday with him which was fantastic. I can't believe how hard it was to not see each other for 2 weeks, and now for another 3 days.

Glad to hear Josh is doing okay!

OMG, hope Josh is going to be okay!

We adopted our dog Ed, and his issues are with children 7 and under - as soon as a child gets near him you would think he was about to cut his head off!

Luckily he was okay with our kids, but they were 8 and 10 at the time.

I am definitely stealing your Ellie Krieger meatball recipe - I need to check out her recipes!
