Stir Fry, Lame Salad, Bad Picture Day?

Thank you guys for all of the exercise variety ideas. Some of the suggestions were swimming laps, playing tennis (or sports in general), Pilates and hiking.

Thursday was a quick day at work (hooray). I came home and prepped dinner and got to work on my weekly house cleaning. I had planned a run today but one of my friends was in desperate need of a Body Step sub, so I ended up teaching for her.

For dinner, Josh got a traditional stir fry with ground turkey, bean sprouts, water chestnuts, snow peas, baby corn and stir fry sauce. The whole bowl was topped with sesame seeds:

My original plan for myself was re-fried beans with veggies, but I was a little more time constrained (due to having to drive to the gym to teach), so I made myself a salad (romaine, spinach, broccoli slaw, broccoli, green bell pepper, pinto beans, salsa) and a side of cantaloupe (mmmm):

Any Twilight fans out there? Did you hear about the conventions going on? There are two that are coming near me: Charlotte and Atlanta. I may have to go!
Tomorrow is FRIDAY!! What are your weekend plans?

That is so funny that they have Twilight conventions! Come to Atlanta... just a (boring, lol) 5.5 hour drive away. I clicked on the link and it's at the Westin Buckhead, which is right next to the 2 big malls in Atlanta!

Okay so normally I would consider conventions nerdy but I would sooooo go to that one! LOL. Any chance ya think RPattz would show? Mmmm....

Shut UP. Twilight conventions? No wonder one of my fave gossip bloggers (dlisted.com) calls those people Twiloonies! LOL

I'm a fan of the series but I dunno about a whole convention...though I did recently dream of R-Pattz. ;)

As a somewhat-frequent reader of your blog, I have a question that is NOT AT ALL meant as criticism. The food that you make for your husband always seems super-healthy, but you always make different meals for yourself. I'm curious as to why you do that.

Also, I always feel so much pressure to eat what friends/ my boyfriend / my parents are eating...how do you justify eating a salad rather than a "bulkier" meal or always making something different (and much less caloric) for yourself?

I love your blog and your attitude, so I really hope that this question comes across just as curiosity, not criticism! have a great weekend.

Erica said...

Hey Molly! Thank you for the great question. First- I usually make something different for myself because I do not eat land based meats (chicken, beef, pork) and my husband does. So thats the main reason. Second- I sort of like to make what I'm in the mood for and if thats a cold salad after I'm a sweat monster from teaching, thats what I will have :). In terms of calories, I never show EVERYTHING I eat. I'm a snacky person and eat about 6 meals per day (breakfast, mid morning, lunch, mid afternoon, dinner, after dinner)- its just what works for me. Where as Josh eats your standard three meals with maybe a single snack a day. I don't keep full track of all my calories, but I make sure in general I am getting enough fat, protein, and calories in general to keep me fueled! Hopefully that helps! :) Let me know if there are any follow on questions.

I loooove baby corn! I need to buy myself a can sometime soon. Twilight convention?? I demand a full recap if you attend!

Love the title. The mention of a "lame salad" made me laugh. I've had many of those myself.

Headed to a birthday party tomorrow night, but other than that hopefully it will be a quiet weekend. I'm still pretty wiped out from travel. For as much as I love to do it, I'm a wimp with being worn out when I return. :)

hope you have a great weekend <3
