More Peanut Sauce?

Wahooo already through Tuesday work! Did you have a good one? Work was a little slowwwwww today, so I was thrilled when I finally got to escape! I came home to hammer out some house work (laundry/little cleaning) and to pre-make din din. I can't seem to get enough peanut sauce these days! For Josh, I made my version of Rachel Ray's Hot and Cold Sesame Noodles with chicken:

And I made myself vegetables with peanut sauce with just a few noodles and I threw in some walnuts for extra crunch! I plan to also have a big ole bowl of fruit :)

Alright, time to head out to teach some Body Attack! Whats on your dinner menu?

And a big CONGRATS to Tina on her pug!!!

Oh! And just a note on yesterdays shrimp recipe. I added a little extra heat and used a finer corn meal this time and I think that is what made the shrimp extra tasty!

That looks so good!! I need to get on this 'peanut sauce' bandwagon for sure! Tonight is my husband's birthday so we're going out for "a steak dinner" (we never cook steak - he's the red meat eater in the family!). Tomorrow night though i'm making a garden summer pasta again!!

Yummy noodles! I'm visiting my sis in NC, and she's taking me out to someplace called the Remedy Diner tonight. Apparently they have lots of vegan options! I'm excited!

I love peanut sauce on pasta! My dinner menus the past few weeks have been increasingly simple. I still want to make homecooked meals, but don't have the energy to try too hard.
