Jicama and Sweet Potato "Fries"

Thank you again for all of the SWEET comments about our wedding photos :) You guys rock! I'm walking around with a huge head today haha.

How was your day? Mine went pretty well. Work was busy and flew by. When I got home, I knew I REALLY wanted to get a run in. Despite the fact that today was suppose to be a rest day....I haven't been able to run outside in quite some time because I've been teaching so much! As a result, I capitalized on the nights freedom and went for a glorious 4 mile run. I then did some house work/ran some errands and got started on din din.

Cantaloupe was on sale this past week, which is why you've been seeing it so much on the blog! I LOVE cantaloupe and really capitalized on the sale!! I enjoyed my last (tear) bowl tonight:


I also tossed 1 cup of jicama and 1 sweet potato (sliced thin) in a little olive oil and then cooked them at 425 until brown and slightly crispy. I served them with a salsa and pinto bean mixture:

The salsa was from Publix GreenWise (organic!) line and was VERY delicious):

It really hit the spot! Since dinner was on the light side, I will probably either enjoy a little indulgent dessert later. Time for So You Think You Can Dance! What are you doing tonight?

so the jicama crisps up like a potato chip? nice!!! i gotta do this sometime instead of buying bags of chips!!! I loooove the sweet potato & beet chips by Terra - maybe i can try to do beet chips too? hmmmmm

Your dinner looks delish! I haven't tried jicama like that--I will have to soon! My night will involve sitting on my booty on the couch (yay) and packing for my trip to GA tomorrow. Have a GREAT night Erica!

Yep, just bought a loupe myself and it is the sweetest most decedant melon all summer.

I use to be allergic to it, actually, I think I still am a little, but somehow it doesn't stop me. I love fruit too much to neglect any one from my diet, no matter how sick it makes me! ;)

I've never thought to put jicama in the oven like that, what a great idea! I will definetly be giving that a try next time I make my sweet potato fries!

Interesting, I've never tried cooking jicama! I usually just eat it raw but cooking it sounds like a great idea! I'm always looking for new vegetables to transform into "fries" so this will be perfect:)

Looks great! I've never heard of using jicama for chips (or fries, whatever you want to call them), but apparently it works. I've used it for coleslaw before and found it to be an interesting vegetable. And who doesn't like odd-looking, interesting veggies?

my night was spent baking away in the kitchen for my in-laws! An awesome lasagna recipe and also some muffins and chocolate coffee cake - which didn't make it to them because it wasn't done in time... and I had a slice this morning! SO good!! And healthy to boot ;)

I've never had jicama... what does it taste like???

I LOVE sweet potato 'fries' - they're one of my favorite things to make! I've never tried Jicama but I definitely want to give it a shot.

Every time I buy a whole cantaloupe, I'm too lazy to crack it open. So I started buying it from the Amish people cut up already, I'm eating it like crazy. Probably one of the few times laziness breeds healthiness.
