My First Buttercup

After an exercise filled morning, there was lots to be done. The rest of my day consisted of:

  • Lots of Laundry (sheets, towels, clothes)
  • A little cleaning
  • A bath for Franky
  • A few hours of work
  • Errands
  • Choreography work
  • Christmas shopping
  • Cooking!
For dinner tonight, I had my first buttercup squash (aka kabocha squash):

Pinto beans topped with TJs seasoning:

Peppers and apple dipped in TJs hummus:

All together now:
Josh had steak topped with the same TJs seasoning, a baked potato and tangerine:


I also received my Britt winnings from Naomi’s amazing giveaway. Hot chocolate and chocolate covered coffee/espresso beans:

And loads of amazing coffee:


I cannot wait to dive in!!! Thank you so much Naomi!

Yay for your first Konocha experience! What did you think? I really think that my favorite way to eat this type is roasted with salt pepper and then loaded with Ketcup. The acorn squash pairs better with the sweet brown sugar or syrup.

Anyways, I must congratulate you on an INCREDIBLE new PR this morning! That's AWESOME girly! I am so proud! ;)

How was that seasoning mix? I love using mixes like that on steamed veggies so if it was good I may have to pick it up!!

Tj's rocks! I have to go with a LIST - otherwise I will just go from aisle to aisle grabbing random things and leaving w/ a $100 bill - and I still need to go to another grocery store for produce and regular items!!! thankgoodness for my shopper app on the iphone ;-) can keep my budget in check!

Hot chocolate and chocolate covered coffee/espresso beans, and the coffee action from Naomi is pretty much the best thing Ive seen in a long time...you are one lucky girl and Naomi is a sweetheart isnt she!

Buttercup? From the picture looks like what we call kabocha :-) It must be from the same family ;-)

Sorry did a double take there. Is that all by the cafe Britt coffee company??
I have a woven bag that some of their beans came in, I think a friend gave it to me since it has my name on it.
I'll be curious to hear how it is... cannot be that bad with a name like Britt. ;-)

Mmm great dinner! So simple, yet so delicious! I want to try a kabocha squash, but I haven't seen them anywhere around here. All the TJ's stuff in this post rocks, too!

And on your To-Do list - Niko needs a bath as well!

What a prize! My husband brought me some Britt chocolate back from Peru & it was great. I would love to have all those coffees to try out. I'm having a hard time finding a brand I like now that we are back from Brazil. Good thing I brought some of the strong stuff back with me to last a bit. :) Glad you had a good Thanksgiving!

I didn't realize buttercup = kabocha?! Buttercup, butternut...I'm already confused. :-)

I've been looking for it everywhere, but can't find it! Yours looks so yummy. I haven't met a squash I didn't like....yet!

Buttercup is so amazing and to me, one of the most filling squashes!! I will just eat it as a snack all day--yummy! They are buggers to cut though--good thing my knives are sharp lol.

OK now see, I thought buttercup and kobocha were the same - but then produce manager at Wegmans told me they weren't and I felt like a total dope for asking! I'm glad to know I'm not the only one who's heard that they are the same thing.

i love that seasoning! how funny, i put a photo of it in my post last night. i, however, did not have delicious TJs hummus :( only nonperishable TJs goods for me! fun treats :)

I love how you post your meal and your hubby's. I should totally do that. We eat different variations of the same thing but I'm a high raw vegan and he'll eat whatever's in front of him!
