- I am going to be making a big change to the blog!! I will be making the announcement on Friday- stay tuned!
Recently, I received coupons from Food Buzz & Fresh Express to test out some of the varieties of Fresh Express bagged salad blends (disclaimer: I received the coupons for free). When perusing their selection in my local grocery store, I noticed they had a few different varieties of coleslaw.
I really enjoy a vinegar based coleslaw and thought its a shame that coleslaw seems to disappear at the end of summer. So, I decided to make a more fall-ish version of the traditional summer picnic dish. The fun part about this recipe is that you can adjust the vegetables & vinegars used and even play around with the add ins (I think dried cranberries, sunflower or pumpkin seeds, or pecans would also make great toppers).
Fall Slaw
Ingredients:
- 1 lb fresh Brussels sprouts, cut in half
- 2 sweet potatoes, cut into pieces (~ the size of the cut Brussels sprouts)
- 1-2 tablespoons olive oil
- 4 tablespoons balsamic vinegar
- 4 tablespoons honey
- Salt & pepper (if desired)
- 1 bag Fresh Express 3 Color Deli Cole Slaw blend
- 2 medium/large apples, chopped
- ¼ cup chopped walnuts
Directions:
Preheat oven to 425.
Mix cut Brussels sprouts and sweet potato with olive oil. Place vegetables onto a non stick cookie sheet and roast for ~30 minutes (turn once and check throughout).
In a large bowl, whisk together balsamic vinegar, honey and salt & pepper to taste. Add cooked vegetables, coleslaw blend and apples. Chill for at least an hour and top with walnuts (or additional favorites) before serving.
Do you like coleslaw? Do you like a vinegar or mayo base?
And I leave you with this picture of Frank sleeping & drooling :) Yes, his lips really are that huge haha.

I heart vinegar slaw - my mom makes the BEST! :)
That picture of Frank just made me laugh out loud. I need to meet that dude - love him!
I usually hate coleslaw, but I think that I would actually eat that one. I dispise mayo based coleslaws. They seriously make me want to gag, but my husband loves them. Needless to say, he has to wait until his mom comes to town to get some homemade. Your Franky is so cute!!!! I love those lips!
oh i LOVE this recipe! i love fall foods haha i can't deny it. i bet that would be super yummy with some b-nut squash soup on the side or even in there! mmm :)
i'm so excited to hear what the surprises are! i think you should share NOW. oh and whatever the changes are there still better be some serious parfait action. well unless you plan on moving to long island then we'll find a new charleston cafe haha
you missed workout wednesday! i'll cover it for you haha don't worry
What a fabulous twist on slaw to make it more fall like! I'll take any type of slaw, vinegar or mayo based. :)

I prefer vinegar based coleslaw for sure, and this one is so creative I love it! Can't wait to see what the blog change is - excited!!
A big change eh?? I can't wait to hear what's up! Frank is so funny with those ginormous lips.
Looking forward to hearing about this big change!
I LOVE that picture of Frank. It needs to be printed on a card :).
This salad is pretty much perfection!
I've always really liked Cole Slaw. Both vinegar and mayo slaw are good to me, I'm easy:)
BIG changes? Can't wait to hear all about it!!
I love coleslaw but it has to have a vinegar base. I'm just not a fan of anything creamy....
Great photo of Frank!
Haha that picture is hilarious! I prefer non-mayo-based slaw...yours looks delicious!!
I can't wait to hear the BIG news about the blog! :) I love when you have exciting things to share. ;)
I just saw a recipe today for a Honey Goat Cheese Butternut Squash Slaw that sounded fantastic. I never really liked coleslaw until I branched out of the regular kind of just cabbage and mayo. There are so many varieties!
Aww, Frank is such a doll! :)
Yum - this looks so good!
I like the Brussels sprouts and sweet potato in your coleslaw! What a nice addition.
oooh love the stuff you included in this fall slaw! I am craving brussel sprouts lately!
LOVE the pic of Frank! "FALL SLAW" - adorable. I'm not a coleslaw fan - i've actually never tried it... shhhh. Austin gets mad when I "dislike" things I won't try. :)
What is this change???! Why am I nervous? hehe
haha that picture of frank is TOO MUCH!! i hate coleslaw but i love light cabbage slaw made with fresh ingredients and a light dressing! that looks fantastic! i can't wait to hear about the new changes happening to the blog!!
Haha, oh Frank you are too adorable.
I love that you took coleslaw and made it into a fall dish. SUCH a good idea! Frank is adorable... And I CAN'T wait to hear about your blog changes! Hmmmm :)
Sues
So what was in the bag, just shredded cabbage? I like a vinegar slaw best too. My days of working as a waitress really turned me off to typical restaurant mayo slaw :-)
what a great idea! I love all coleslaw. my favorite is KFC. shameful, I know.
Yummy! I used to love mayo-based coleslaw, but I honestly haven't had a hankerin' for it in YEARS! I do love vinegar-based in fish tacos. :D Thanks for the review!
I can't wait to hear about your surprise! Your fall slaw looks delicious, what a great idea. :)
cant wait for the blog changes? new layout, new design?
if you're brave enough to go to wordpress, im really impressed!
and i use mayo (vegan) and apple cider vinegar + sugar to make the best cole slaw dressing ever. So BOTH mayo and vinegar :)
I'm not a fan of cabbage, but I might have to try this recipe using broccoli slaw:)
I am definitelyy saving this recipe! And the photo of your dog cracked. me. up. So cute!!
baaahhhaa that picture of Frank is priceless. It should be on a card.
And this is just fabulous. I love cole slaw!! And I do miss it in the winter.
I'm using this recipe in my seasonal tab!
oh my gosh that looks amazing! So creative Erica!! I love coleslaw, but I'm more of a vinegar based girl. I rarely like a lot of mayo in anything. I had the best slaw at the this little lunch shop by my parents, wish I had the recipe to recreate it!
Frank is a CUTIE!!!
This sounds SO good! I always thought I hated coleslaw, mostly because I only knew the soggy kind in diners that's dripping with mayo, and I am not a fan of mayo! This I could get down with, though. I like the idea of adding some dried fruit and nuts too!
What a fun fall twist - looks super tasty. And I love that pic of Frank - so cute!
I'm not really a coleslaw fan, but OMG that picture of Frank is great.
Oooh I can't wait to hear your blog announcement!
You know it's funny, I grew up HATING coleslaw. But recently I tried some at a restaurant and LOVED it! Of course I don't know if it was mayo based or vinegar... ;-)
I love your idea of a fall slaw with apples and walnuts! Can't wait to hear about your blog change, is sounds exciting!
I love vinegar based slaw b/c I can't do mayo--- YUM!
I am so curious about the big change! I got those fresh express coupons so I need to keep this post in mind. I actually always hated coleslaw but that was because I didn't know what GOOD coleslaw tasted like. Now I love it! I also love Frank's lips.
Enjoyed the puppy picture, so cute!
I've never made roasted brussel sprouts? I usually steam or stir fry them.
Trader Joe's had a sampling of coleslaw recently and it was equal mayo/vinegar and it was tasty. The mayo was olive oil based.
I always buy coleslaw mix with the intention of making a coleslaw but for some reason I end up using it as a salad instead or using it for cabbage stir-fry.
I love how you turned a summer favorite into a dish with fall flare--super creative! Can't wait to hear about the changes :-)
not a big fan of mayo based coleslaw, but when it's with raisins i swoon.
