Oatmeal Chocolate, Chocolate Chip Bars, PR

 

Good morning! Hope your weekend is off to a good start! This morning, I ran a 10K on the Isle of Palms.  I ran the same race last year. Last year, I finished in 50 minutes & 48 seconds….this year, official time was 48 minutes & 01 second!! Some pictures from the event. T-shirt & bib:

I realized yesterday that I have been posting a LOT of baked goods. I promise I am still cooking, my baking has just been a lot more interesting ;). I also realized yesterday that I had some eggs that were approaching their best by date….so I decided to bake some more.

Oatmeal Chocolate, Chocolate Chip Bars

Ingredients:

  • 2 cups dry oats
  • 1/4 cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/2 cup chocolate chips
  • 1/4 cup applesauce
  • 1/4 cup vegetable oil (you could also use more applesauce)
  • 2 eggs or ½ cup egg substitute

Directions:

  • Preheat oven to 350 degrees F
  • Mix first 5 ingredients
  • Add remainder of ingredients and mix until well combined

  • Spray pan and press mixture into the bottom
  • Bake for ~25 minutes
  • Let bars cool completely, cut into squares

What are you up to for the rest of the day? I am planning on doing some more baking (granola), learning my choreography for our program launches at the gym next weekend & watching lots of college football (GO PENN STATE!!!).

That's a great time! Congrats!! I think that was almost my exact time when I did a 10k a couple years ago.

I'm going to be spending the rest of my day at Whole Foods picking up snacks for the Michigan football game. Then watching the game. I'm a huge Nebraska fan but they aren't playing this week so I will be cheering for my husbands Michigan team. I'm a good wife like that;)

you seriously have been a baking machine and i LOVE IT. i want to bake right now because of you haha i actually just might make these oatmeal choc chip bars as we speak because i juuuuuuuust got new flour! and i'm looking for something to do that's not schoolwork hahaha

A speed demon indeed! I wish I had your endurance, I used to, but it was all in my exercise addictive past, you clearly do it for the right reasons. I'm totally digging the baking kick!

Great job on your 10K. You are a speed demon, my 10K range around 60-70 mins in the past.

I'm running a 10K on Thanksgiving Day. I'm excited to run with friends and also to raise money for the local Food Bank :)

I like that you don't use too much sugar when you bake, my kind of treats.


About your comment, I wish my area offer more variety of the Body Pump classes, but I've only done one kind and I think it's official name is Les Mills Body Pump 73. I know there are more fun versions out there and I hope to get to try them soon.

first of all i have to say your chocolate chipped filled cookies on the previous post look AMAZING. another item i need to snag at TJs when i am in cali--almond meal! i hear it is easy to make at home, though, so maybe i ought to try. dinner and froyo looked like fun, you are so cute.
