Vegan Chocolate, Chocolate Chip Pumpkin Muffins

I can’t get enough pumpkin right now, how about you? I wanted to bake up a treat for some special friends and knew it had to contain pumpkin. I hit up my usual pumpkin muffin recipe and changed it slightly to make it a bit more indulgent.

Vegan Chocolate, Chocolate Chip Pumpkin Muffins

Ingredients:

Wet ingredients-

  • 1 cup plain canned pumpkin
  • 1/3 cup water
  • 1/3 cup apple sauce (unsweetened)
  • 2 tbsp. ground flax seed
  • 1 tsp. vanilla

Dry Ingredients-

  • 1 1/3 cups whole wheat flour
  • 1/3 cup cocoa powder
  • 1 cup sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. kosher salt
  • 3/4 tsp pumpkin pie spice
  • 1 cup vegan chocolate or carob chips (I used minis)

Directions:

  • Preheat the oven to 350º
  • Spray a muffin tin with nonstick spray and set aside
  • Mix wet ingredients in one bowl, dry in another
  • Combine wet & dry ingredients

  • Spoon the batter into the muffin tin, distributing evenly
  • Bake until center of muffin is fully cooked (~14 minutes for minis, 26 minutes for full sized muffins).
  • Let cool for a few minutes in the pan and then remove to a cooling rack

How are your workouts coming this week? Mine are going well. Usual Body Pump, Step & Attack! I am also spending a lot of time learning the new choreography for our big Super Saturday release.

pumpkin and chocolate is ALMOST as good as pb and chocolate. i guess diff seasons call for diff pairings :)

I'm definitely drooling over those muffins! I'm eating pumpkin in my oatmeal just about every single day, hehehehehehehe!

Workouts are going great this week. The temps are down and my frisky toosh is out there, hittin' the road early in the morning!

By the way, there is a Les Mils Quarterly coming up next month and I wanted to ask you about it. Have you ever been to a Quarterly Training? It looks like they give you a taste of every les Mils class in a one day training. I think it would be good for me to get this experience because I can't decide what area or class I really want to specialize in. I;m just trying to get as much experience as I can. Do you actually get an certifications with this or is it just more of a renewal thing for teachers that already have their certifications?

i love pumpkin muffinsss! i usually make the cupcake version from vegan cupcakes take over the world :) so goood! tho im bookmarking urs to make when i finally get my hands on some pumpkin this season!

i always want to do workouts from dvds but i always find the ones i get to be horrible and i feel foolish. Do you have any recommendations? Are those ones you made? or just ones ur doing?

You ARE a pumpkin making machine! Love it - must try a recipe so that I can have pumpkin for the first time!! :) I think trying it with chocolate will make me love it for sure!

I've been learning the new Group Step and Group Power choreography, too. There are a few tracks left to learn - I keep putting them off b/c they're songs I don't like. Haha!

My friend JUST spotted canned pumpkin at the store this week (I've been stalking the shelves for weeks now), so I'm gonna go stock up tomorrow! I will DEFinitely be making pumpkin muffins. :-) Those look delicious! Love the pumpkin/chocolate combo. Frank is so sweet, I love his sweet little eyes!

Can anyone buy those workout dvds or only if you are an instructor? I'd love to try them out but don't live near a gym that offers it.

Just made those muffins along with a pumpkin spice icing, and oh my god! I have never made a successful vegan baked good until tonight, thanks to you! They are semi-crisp on the outside and moist and yummy on the inside. Thanks so much for sharing this recipe.
