Melty Mozzarella Sammies

Thank you all for your yucca suggestions!

Hope you had a nice Tuesday. Mine went pretty well!! I worked, did a little bit of light cleaning & laundry, and headed out to teach Body Attack. I have received a lot of questions about the Les Mills group fitness classes I teach & take, so I wanted to insert this video of a portion of a Body Attack class I found on youtube.




Hope you enjoyed it! When I got home, I made up an easy dinner for Josh and I. Josh had a toasted Arnold thin topped with WFs pepperoni, fresh mozzarella, spinach, a little marinara sauce and a shake of S&P. On the side he had some more mozzarella, steamed green beans and an orange:


I had the same thing minus the pepperoni, plus sliced tomato. On the side I also had tons of steamed green beans and cantaloupe (addict):



Question- Do you all have any general healthy eating rules that you try to stick to on most days? I try to eat a fruit and veggie with every meal (even if it is just a little lettuce on a sammie). I'd love to hear your thoughts.

Try to get in my daily fruit and veggie requirements, water and not eating after 7pm! Just keeping it simple!

haha when I watched the class my first thought was, "dang, girlfriend must have some serious energy!!!" - I give you mad props for instructing awesome, energetic classes like that! (I've never seen a Body Attack class before). Sweet! :)

Mmm..I love melty mozzarella!!! I try to stick to the vegetable rule...I always try to eat vegetables at every meal...even if it's just a few chopped onions thrown in a scramble at breakfast.

I eat alot of the same things, but there is def veggies and fruits at just about every meal, and i snack on alot of veggies to throughout the day! i'm a carrot addict. :)

that is so awesome, I can't wait to see if they offer that at my new gym in Bost! I'm obsessed with TKB and that looks really similar :D I always try to have veggies with lunch and dinner, faves are tomatoes and carrots! It's just my raging sweet tooth that attacks every night!

Haha, we had a similar looking din tonight. I love the Arnold's thins, they are perfect for holding so many great veggies.

I definitely eat a balance of all foods at almost every meal. But if I notice I am eating more fruits at breakfast and lunch (which usually happens) I make sure I get a veggie filled dinner in to compensate.

I wish I could take one of your classes! I did my elliptical tonight. I don't have any rules, but I HAVE to have an apple every day. I also eat oatmeal for breakfast every morning-sometimes on weekends I eat something different though:) I also eat mini meals throughout the day to keep my metabolism up. I try to eat a fruit or veggie with every one!

I'm also trying to incorporate 1 cup of veggies and fruit everyday. Limit myself to desserts. Also, work on water intake.

I eat a freakish amount of veggies--compared to the average person. I just love LOVE steamed veggies--especially snap peas and wilted spinach. i don't even have to make myself eat these things, my body just craves it now. I hope you have a great night!!

i'll stick to body pump ;) the choreography gets me in those aerobics classes! no rules, but i love my fruits and veggies so i always have many of those in my fridge :)

(1) never skip a meal -- always leads me to overeating!
(2) fruit/veg in each meal (totally agree w/u on that, a meal just doesn't feel complete w/out!) That class on vid looks great! I love taking choreographed aerobics classes - the best :)!!

I could def do better having fruits and veggies at every meal! I don't really have any regular rules I try to follow...other than pay attention to portion size with crackers, chips and other carb-y foods! It's so easy to go overboard!

I saw your comment on one of my posts this week- I so took advantage of the Publix sale on the back to nature products!! :)

You guys and those Arnold thins. I have never even seen them before! Sounds like a good dinner though. I try to generally eat healthy, but no specific rules. I like the idea of a fruit or veggie with every meal. I have been pretty much only been snacking on fruits and vegetables lately.

Wow, that video looks intense!! I don't know how you do it with running and teaching those classes - I would need an IV of caffeine!

Hmmm, great question. I always drink water with every meal, and TONS throughout the day. And I always to try incorporate/add a fruit or veggie to each meal, too. Not to steal your answer. ;-)

oooh - I have everything on hand for those little sammies - i'm so making them Thursday! Thanks, girl!! I'm working on fitting in more veggies and fruits, i'm also trying to make sure I get at least 80 grams of protein!!

It's like a little mini pizza sammie!! I try and drink at least 64 oz of plain WATER and then all my extra liquids (juices, diet drinks, coffees, flavored waters, etc). I usually eat fruit all day, so I try and have vegetables with dinner.

That class looks SO COOL! I wish I could take something like that. It look kind of like a dance routine.

Rules? I usually crave fruits and veggies so that usually doesn't take any effort to include. I definitely aim to eat breakfast every morning even if I'm not hungry. I'm working on eating a larger breakfast to carry me through the day.

Fresh mozz (and melted)=amaaazing!

I try to drink plenty of water and make sure I get in all of my fruits/veggies, protein and omegas. Most of the time this all comes pretty naturally for me though.

Tomato and Mozzarella is one of my favorites :) Yum!

I try to make sure that I get enough fruits and veggies but also that I am not obsessive about it because I tend to do that sometimes.

I've never seen a Body Attac class before - but it sure looks great. And I love all the other Less Mills classes. My faves are Body Balance (tai chi/yoga/pilates inspired) and Body Jam (dance, dance, dance).
I think my meals are generally balanced (although over here, in Sweden, we tend to eat more starchy things, such as potatoes, compared to you guys). My focus lately have been portion control and trying to eat slower. It's hard though :)

I try to make half my plate fruits/veggies. Not always possible, but good to aim for :)

Hellena- hoooray for Body Balance and Jam! Both excellent programs. Balance is called "flow" in the US (but I think they're working on changing the name). I take it once a week- sooooo good after all the cardio :)

I'm not sure how you keep doing the moves and talking at the same time..... I love classes like that though!

No real food rules, I just try find some balance through the day.... if I'm low on veggies at one meal I'll load up at the next meal.

Those classes look intense, but fun! I want to learn Zumba dancing really bad, too!

As for healthy eating, I eat a mostly fruit/veggie/whole grain diet, but always include some type of protein other than red meat, and of course a sweet treat each day ;-)

You and I are so funny, we definitely do eat about 3X the amount of fruits and veggies as most people! they just taste so darn good and keep you so energized!

I don't really follow any specific rules but, as you can tell, I eat a ton of fruits and veggies and also make sure I get some protein in each meal.

Thanks for posting the video, I want to try the Les Mills classes at my gym but they are always at inconvenient times!

My healthy eating rule is to make sure I'm actually hungry and not just eating to eat!

No specific 'rules', though I make sure I eat at least 1 full portion of dairy each day, some source of protein + grains at each meal and plenty vegetables. My fruit intake has dropped dramatically over the past couple of years...no idea why! I used to eat about 4 apples a day!

Oh that workout looks like fun! I like workouts that aren't the same thing day in and day out so that would be up my ally :)

Your dinner sounds delicious!! They're like mini pizzas! I definitely try to make veggies a key piece in my meals - I just love them so it's not too hard!

I try to get all my water every day - I do great at work, but on the weekends I don't keep up with it as much.

Love your pizza sammies! I would have had extra cheese on the side too! :D

I try to eat as much fruits and veggies as possible, like you. I also try to get in a good amount of protein or fiber at each meal so that my stomach isn't grumbling all throughout the day! Although, I also believe in living a little, so I have a few pieces of candy and dessert everyday as well (just not a piece of chocolate cake, I reserve that to once per week) :).

I just try to make sure veggies and fruit are as abundant as possible! I will pretty much always eat plenty of carbs/dairy/protein as well but veg is what I worry about getting on the plate!

The Body Attack looks coordinated, strenuous and energetic...how long is it? I would be half-dead at the end of it!

My rules: Breakfast is usually cereal or oatmeal with OJ and a banana.
Minimum 5 servings of fruit and veggies in a day.
And plenty of water...atleast a gallon.

dang melty cheese heaven! the one reason this girl could never ever be vegan is cheese and cheese alone :) i eat strict 6 days a week and one day a week i eat whatevs. it works for me now as i am tyring to lose some inches ;) package mailing today!

I definitely try to get my fruits and veggies in everyday with usually no problem witht he veggie part. lol
I also always make sure I drink enough water throughout the day as well!

Body Attack looks so fun! I would love that. Wish I could come to your classes! So are you like one of those three people on stage?

I don't think I consciously have eating rules, but I suppose that like you, there is always fruit and/or vegetables present at every meal!

Since you are the fitness queen dear, I've got some questions. My personal trainer is loading me up with more weight and plyometrics, but I dont' feel it's doing anything for me. I want to keep a long, leaned and toned look but not look like a fitness girl. But I don't see the best results sometimes from light ways or pilate style classes--any tips?

And to give you a quick look at what I do, I run three days a week for an hour and do kickboxing/ step three days a week with arm free weights at home three days a week and everything from free weights to machines for legs and back at the gym on the days I run. I've done strength training workouts by Cathy and Amy Bento before and enjoyed them. I'm just looking for something to mix it up and keep me toned without bulking me up like a body builder. I like my boobs. :)

body attack indeed! i haven't been to the gym in so long, i got tired just watching! it looks like a lot of fun though.

the sandwiches look really good. i've been so awful with my eating this summer (AWFUL), but when i am eating well, i like to make sure i'm incorporating some healthy for of carb, protein and veggie into every meal. and then when i want snack, i eat fruit.

I try to eat at least one salad or veggie-based meal a day. Ironically, it seems easier to do during the week even though I have more time on the weekends.
