I returned home, unloaded my goods and made up some Double Chocolate Chip & Pine Nut Cookies!! We're going on a trip tomorrow (which I will tell you about tomorrow or Sunday IF things go well) and I wanted to bring the people we're visiting some baked goods. I used Joy of Baking's chocolate cookies recipe as the base, doubled all quantities, removed the white chocolate chips, added regular semi sweet chips and toasted pine nuts. The yummy result:

i've definitely had italian pine nut cookies but never thought of using them inside a drop cookie dough. maybe a little pricey for me, but they sound good.

Never had pine nuts..I am not a big fan of nuts in general, except for peanuts.
