Shrimpy Salad Two Ways

Hi All! Hope your Tuesday is treating you well! Mine has been OK so far! I had a semi slow day at work and came home and prepped dinner! Since I teach late on many week nights, I try to fully prep or at least partially prep my dinners. As I've said before, this helps me make sure I get in a healthy and delicious meal.

For tonight's din din, I made shrimpy salads. My husbands shrimpy salad is Asian inspired and in it I used these awesome and cheap bean sprouts I found in the produce section:

Aside from the sprouts, his salad contains spinach, broccoli, water chestnuts, snap peas, oranges, walnuts, and shrimp. When hes ready to eat it, he will top it with a mixture of olive oil, lemon juice, and a little S&P:

My salad is Mexican inspired and contains romaine, broccoli slaw, broccoli, red bell peppers, shrimp, snap peas and shrimp. I am going to top mine with salsa:

On the side, I will probably have a few tortilla chips and Josh will probably go for a grilled cheese. This is a great, quick, easy dinner!
I'm am off to throw in some laundry and then I have to teach Body Attack. Hope you all have a fabulous night!

Yum dinner looks good. good i dea pre-prepping your meals so you know when you get home you have something nice and healthy waiting for you!

Beautiful salads! When I first saw this post and the pictures I thought, "Wow, she's eating dinner early!" but now I understand. :) Good idea with the prep!

You know what's good in a salad like that? If you want a little kick sprinkle some cayenne pepper on top before you add the salsa :)

By the way there's a new dog food commercial on here and it has an English bulldog. Every time I see it I'm always like, "FRANK!!"

Salad= yum! Especially with all of the heat we've been having.

and laundry is one of my favorite tasks - I love the smell of laundry detergent :-)

Pre-prepping dinner is such a good idea, I should definitely start doing that!

Yum, you can never go wrong with shrimp! Here in NYC shrimp tends to be quite expensive so I don't get to have it very often. Yours looks absolutely delish:)

I have been feeling lazy for the past couple days and not in the mood to cook dinner:) I better go find something to eat tonight. Lifted weights and I can tell my muscles are craving some protein. I always start shaking:) Have fun at your class!

You are so productive by prepping dinner early. I love when I am able to do this. It's so nice to be able to come home and just throw dinner on the table in minutes.

AH you're right, our dinners do look the same! Shrimp on salads is the best, don't you think? I could have used some bean sprouts, though!

I was allergic to shrimp as a child. My doctor did say that allergies (especially food) change as we get older. I wish I had the courage to try them again!

Both look grat! I love shrimp! How do you cook yours? I usually but it pre-cooked because I am pretty sure I'd eaither WAY over cook it, or give myself food poisoning (again, doh!)

I was craving sprouts, but my lame store wasn't selling fresh (or bagged). They referred me to the canned aisle. It was nastiness!
