How was your day? Mine went pretty well. Work was busy and flew by. When I got home, I knew I REALLY wanted to get a run in. Despite the fact that today was suppose to be a rest day....I haven't been able to run outside in quite some time because I've been teaching so much! As a result, I capitalized on the nights freedom and went for a glorious 4 mile run. I then did some house work/ran some errands and got started on din din.
Cantaloupe was on sale this past week, which is why you've been seeing it so much on the blog! I LOVE cantaloupe and really capitalized on the sale!! I enjoyed my last (tear) bowl tonight:
I also tossed 1 cup of jicama and 1 sweet potato (sliced thin) in a little olive oil and then cooked them at 425 until brown and slightly crispy. I served them with a salsa and pinto bean mixture:
The salsa was from Publix GreenWise (organic!) line and was VERY delicious):

so the jicama crisps up like a potato chip? nice!!! i gotta do this sometime instead of buying bags of chips!!! I loooove the sweet potato & beet chips by Terra - maybe i can try to do beet chips too? hmmmmm
Your dinner looks delish! I haven't tried jicama like that--I will have to soon! My night will involve sitting on my booty on the couch (yay) and packing for my trip to GA tomorrow. Have a GREAT night Erica!
The fries look fabulous! I'm excited for the top 4 tonight :)
Yep, just bought a loupe myself and it is the sweetest most decedant melon all summer.
I use to be allergic to it, actually, I think I still am a little, but somehow it doesn't stop me. I love fruit too much to neglect any one from my diet, no matter how sick it makes me! ;)
Hope you had a great day!
Looks awesome! Creative idea w. the jicama. Just saw your pics - cute!
Yum those chips look so yummy! I love crunchy jicama!
your sweet potato chips look ON POINT! awesome job!

Yum-o sweet potatoes!
I think I've been eating salsa with just about everything lately! ha, I love it!
I've never tried jicama, but this is the third time I've seen it today. It looks good!

your fries look so good. my night is one relaxing one with a book, and maybe some cake and icecream :)
You've convinced me that I need more jicama in my life! Yum! I would have never thought to do this with jicama. :)
Tonight, I took a long walk and am now drinking wine and watching Top Chef. Living the life.
Yum, those look great! I blogged and watched SYTYCD too, love that show!!

I love your state. i don't want to leave!
Mmm sweet potato fries! You made em! I should try the jicama though - never had it! Have a good one :)
Love the idea of jicama in fry form!
I've never thought to put jicama in the oven like that, what a great idea! I will definetly be giving that a try next time I make my sweet potato fries!
I can't get enough 'loupe, either!! It is my favorite melon, and definitely top 3 favorite fruits. :-)
Yum, those fries look awesome. I've never had jicama fries, but I had bnut squash fries today and they were delish. I've gotta try the jicama :D
OMG OMG, i'm watching Janine's solo right now- amaziiing :D
I have got to make jicama chips! How did I never think of this?
I just saw your wedding pics! So cute! I LOVE your dresses!
I just discovered jicama and have only had it raw. Jicama chips?? Gotta try it.
how did you get your veggies cut so thinly? mandolin slicer? or knife?
Interesting, I've never tried cooking jicama! I usually just eat it raw but cooking it sounds like a great idea! I'm always looking for new vegetables to transform into "fries" so this will be perfect:)
Looks great! I've never heard of using jicama for chips (or fries, whatever you want to call them), but apparently it works. I've used it for coleslaw before and found it to be an interesting vegetable. And who doesn't like odd-looking, interesting veggies?
ooh, how did the jicama work as chips??
those fries look awesome!
The sweet potato/jicama chips look great! I've never tried jicama before....I think it's high time I buy some!
You know I just had jicama for the first time last week. So good! I like the idea of making fries with them.
Great dinner. Baked sweet potato fries are my favorite! I watched SYTYCD last night too! Who do you want to win? Have a good day!
Call me crazy, but I do not like any kind of melon!! I never have. Glad you enjoyed yours though :-)
I am loving your jicama and SP fries! I've never had jicama - that's going to have to change ;)
Glad you had a great day and a fantastic run! Hope the rest of your evening was relaxing and that you have a great day today!
I need to try jicama!! That looks delicious.
I've only had raw - I will definitely be trying it baked!!
yay for SYTYCD - however, RIP Ade. he was my fave :(
The chips/fries look fantastic! Were they sliced very thinly to start?
I can't believe I missed SYTYCD last night! I have to get caught up NOW! :)
Have a great day
my night was spent baking away in the kitchen for my in-laws! An awesome lasagna recipe and also some muffins and chocolate coffee cake - which didn't make it to them because it wasn't done in time... and I had a slice this morning! SO good!! And healthy to boot ;)
I've never had jicama... what does it taste like???
I LOVE sweet potato 'fries' - they're one of my favorite things to make! I've never tried Jicama but I definitely want to give it a shot.
To get my milk frothy I use my trusty frother that you can find here: http://www.amazon.com/BonJour-Manual-Maximus-Brushed-Stainless/dp/B000ZMDQ54/ref=sr_1_15?ie=UTF8&qid=1249571198&sr=8-15
I'd TOTALLY recommend it! It makes awesome foam :)
Every time I buy a whole cantaloupe, I'm too lazy to crack it open. So I started buying it from the Amish people cut up already, I'm eating it like crazy. Probably one of the few times laziness breeds healthiness.
ooh those "fries" look AWESOME!!
Wow, those potatoes and jicama look awesome! I love jicama, but never tried that...yum!!
Those chips look so yum and crispy! Homemade terra...got to try that!
I can't beleive the finale of SYTYCD is tonight! Thank god there will be a fall season, eh? I didn't vote for a winner because i couldn't decide!
I have yet to try jicama. I really need to find some. It always sounds great! Loved the additional wedding pics in your last post!
Those look just like store-bought terra chips! Yummy.
Ooooh what a good jicama tip! I never would've though that it crisps like a chip?! I'm going to try that ASAP...
