Prosciutto & Artichoke Pizza, Cinco De Mayo Food

Happy Cinco De Mayo everyone! Hope you had a nice day. Before getting to our Cinco De Mayo dinner, I wanted to post a picture of the pizza I made for Josh last night. If you've been reading my blog for a while, and read this restaurant review in particular, you will know that Josh is a HUGE fan of artichoke and prosciutto pizza! For some reason, I have never made it at home...until last night! I made up a big batch of white whole wheat pizza dough and topped it with a little pizza sauce, mozzarella, artichoke and prosciutto. I then baked the pizza at 400 degrees for about 15 minutes. Josh said it turned out well! I opted for a ginormous salad instead :)

Today was a busy day! After work, I cleaned, prepped dinner and then headed out to teach Body Step. One of Josh's friends was joining us for a fiesta, so I laid out some black bean dip and salsa/chips for them to snack on while I taught.
For dinner, I cooked up some flank steak:


And made up another batch of refried beans:


For Josh and his friend, I made flautas with inspiration from this recipe. I topped tortillas with mixed shredded cheese:

And then steak:

I also added tons of corn. I rolled them up, sprayed them with olive oil cooking spray and baked for 10 minutes. I then flipped them over and baked for another 10 minutes. I made myself a vegetarian version with just cheese, black beans, and corn. Here is a pic of Josh's plate:


They turned out crispy and delicious! The boys topped theirs with taco sauce. I topped mine with a little salsa and had a side salad filled with bell peppers. Very yummy! Did you do anything special to celebrate cinco de mayo?

KERF, Dinner, Cinco De Mayo (early)

Hey Everyone! Hope your weekend went well. My Sunday was very nice. I headed out to the beach and laid out for a few hours with a friend. Afterwards, I met up briefly with Kath, who is in the area for a friends wedding. Kath and Matt are even sweeter in person than I thought they would be. Kath and I posed for a quick pic:



After our brief meet up, I ran some errands and went home to make up some dinner and relax! I made a big steak and brussels for Josh:

And a random salad mix for me (brussels, jicama, broccoli slaw, apple topped with a little olive oil and red wine vinegar):


Josh and I also had some yummy desserts of berries and nut butter!

I wanted to post this very cinco de mayo appropriate recipe today (in case anyone is looking for ideas). For some reason I forgot to pull the pic off my camera so I will post it later.

Homemade "Refried" beans from Eating Well/Food Network:

Ingredients:
1 teaspoon oil
1 small onion, chopped
1 jalapeno pepper, chopped
2 15-ounce cans white beans, rinsed
3/4 cup canned diced tomatoes with green chiles or tomato salsa (I used a combination or taco and tomato sauce because Josh doesn't look tomato chunks)
1/4 cup shredded Monterey Jack or Cheddar cheese (optional)

Directions:
Place a pan over medium heat. Add oil, onion and jalapeno and cook until beginning to soften, 1 to 2 minutes. Add beans and tomatoes (or salsa/tomato sauce/taco sauce); cook, stirring often, until heated through, about 3 minutes. Transfer the bean mixture to a medium bowl and mash with a potato masher (or back of a spoon/fork) until creamy but still slightly chunky. Stir in cheese.

This was really yummy! It makes a TON of beans, so be prepared to have leftovers :). Picture to come later! Enjoy your Monday!!
