After our brief meet up, I ran some errands and went home to make up some dinner and relax! I made a big steak and brussels for Josh:
And a random salad mix for me (brussels, jicama, broccoli slaw, apple topped with a little olive oil and red wine vinegar):

I wanted to post this very cinco de mayo appropriate recipe today (in case anyone is looking for ideas). For some reason I forgot to pull the pic off my camera so I will post it later.

Homemade "Refried" beans from Eating Well/Food Network:
*
Ingredients:
1 teaspoon oil
1 small onion, chopped
1 jalapeno pepper, chopped
2 15-ounce cans white beans, rinsed
3/4 cup canned diced tomatoes with green chiles or tomato salsa (I used a combination or taco and tomato sauce because Josh doesn't look tomato chunks)
1/4 cup shredded Monterey Jack or Cheddar cheese (optional)
1 jalapeno pepper, chopped
2 15-ounce cans white beans, rinsed
3/4 cup canned diced tomatoes with green chiles or tomato salsa (I used a combination or taco and tomato sauce because Josh doesn't look tomato chunks)
1/4 cup shredded Monterey Jack or Cheddar cheese (optional)
*
Directions:
Place a pan over medium heat. Add oil, onion and jalapeno and cook until beginning to soften, 1 to 2 minutes. Add beans and tomatoes (or salsa/tomato sauce/taco sauce); cook, stirring often, until heated through, about 3 minutes. Transfer the bean mixture to a medium bowl and mash with a potato masher (or back of a spoon/fork) until creamy but still slightly chunky. Stir in cheese.

Lovely to meet you Erica :)
Yes, we should definitely do coffee or something some time! Now that I'm done marathon training I feel like I have a ridiculous amount of free time, it's such a weird feeling!
I work 8-5 in Mt. P so anytime in the morning I could leave for coffee, or we could meet up after work. Just shoot me an email at ChasRunner at gmail dot com. :)
