Kiddo & Cookies

Happy Friday! I’m so glad its the weekend. Josh has been on travel all week and we cannot wait to have him back home. Few pictures of the kiddo from this week:

After being awesome while I was getting some shopping done, I decided Kay deserved a new toy, pooh ball:

This week has been a little non-stop. I taught 7 classes between Monday-Friday, worked, and had the usual at home responsibilities (baby, dog, cleaning, etc). Kay also had her second gymnastics class. She did much better this week (she was super scared the first week). Her favorite thing to do is “cartwheels” over the mat.

We also got in some great time outside. I love SC:

Off to prep dinner then go swimming. This weekend we have brunch and BBQ plans to celebrate Father’s day. A big happy father’s day to my dad and Josh’s dad too! What are you up to??

Weekly Meal Plan & Collective Coffee Co.

Hello! After about a week straight of rainy days in South Carolina, the sun is finally shinning! I’m super excited!! Today, I’d like to share with you our weekly meal plan and a restaurant review of a newer coffee/food spot.

So, what’s on tap for this weeks eats? I food shop on Fridays, so that's where my weekly plan starts:

  • Wednesday: Burgers (beef for him, veggie for her), broccoli & fruit
  • Thursday: Vegetable soup with grilled cheese

What’s on your plan?

On Sunday morning, Josh, Kaylin & I had the opportunity to try out a newer restaurant in Mount Pleasant, Collective Coffee Co.

Collective Coffee is just beautiful inside:

Beyond beautiful, the restaurant offers delicious pour over coffees, fresh squeezed juices, and tasty dishes:

IMG_3913According to the owners, everything at The Collective is made to order, using organic components when possible, and most menu items are homemade.  You can check out the full menu here. Josh started with the fresh squeezed orange juice:

IMG_3914 I stole a sip. It was so yummy. I also let Kaylin have her first sip of juice, she liked it a lot (I don’t let Kaylin have juice because most are packed with sugar and artificial flavors/colors):

I, of course, tried out their coffee. Bold and so yum. I also was a big fan of their mugs:

When I saw the menu, I knew I had to try the parfait! It was made with vanilla bean yogurt, granola, fruit & honey:

It was amazing and so filling. Josh had the chorizo wrap which contained egg, black beans, queso fresco, pickled jalapenos, avocado, and cilantro. On the side were bagel chips:

Runaway Brides

This morning was amazing! Kindal and I ran the Color Me Rad race in our wedding dresses to raise money for Special Olympics (donations still welcome!!):

I’m happy to report that we raised $705 for the cause!! It was a cold (for South Carolina) morning…but we braved the temperatures (thank you Kindal/Dan for all of the pictures):

TV Debut & Weekend

AH! So, I told you how I’m running the Color Me Rad race in my wedding dress to raise money for the Special Olympics, right? Well, tomorrow, Kindal, Tracey (from Happy Wheels), and I will be featured on Lowcountry Live! We filmed our segment today.

Two of My Favorite Cookie Recipes

How was your weekend? Ours was packed with all kinds of good stuff! On Friday, in between my to dos, I fit in an awesome bridge walk with Kaylin & my friend Amelia:

Since Josh’s birthday is on Tuesday (Happy birthday Joshers!!), I decided we’d celebrate all weekend long. He had a massage on Saturday and lunch with his family. He also helped me make Kaylin’s Valentine’s based on this amazing idea:

Saturday night was the “big” birthday celebration. Josh’s parents watched Kaylin for the night while we dined and stayed in the city. We stayed at the Courtyard Marriot which was fantastic. The rooms are more on the modern side:

Once we checked in, we walked around town for a bit. We stopped at my favorite candy store so I could get a little bag of my favorite candies (gummy raspberries & blackberries):

We dined at our favorite Charleston restaurant, Grill 225.

On Sunday morning, we walked around looking for somewhere to have breakfast. A lot of the restaurants were closed (it was early), but we stumbled upon this adorable bakery:

Everyone who worked at the bakery was super friendly. We tried their yogurt/fruit/granola combo:

You can’t see the granola, but it was yummy. I also got a soy latte. Delicious:

The rest of my Sunday involved doing things around the house, going for a run with Kaylin, and baking cookies to bring into Josh’s work for his birthday. Two of my favorites:
