Quick & Easy Vegetarian Bowl

Last nights dinner was a tasty and easy one! I saw Jessie post about her go to Vegan Protein Bowl and it made me crave my own favorite quick & easy vegetarian (or vegan) bowl. I usually make this dish by roasting my vegetables, but I went a slightly different route last night so I could use my new steamer insert that my friend Mandi gave me for my birthday.

I chopped up a parsnip and sweet potato…

and steamed them up…

I mixed the steamed veggies with Bush’s reduced sodium pinto beans…

and Success Brown rice. The mixture was topped with salsa. For a little extra yum factor, I usually place shredded cheese on top.

Delicious & healthy.

And for workout Wednesday, here is my plan for the week:

  • Monday: Ran to warm up, Taught Body Pump
  • Tuesday:  Taught Body Attack
  • Wednesday:  Ran outside
  • Thursday:  Teach 45 minute Step, 45 minute Pump
  • Friday: Off
  • Saturday:  Teach Body Step
  • Sunday:  Walk with Lindsay

ooh that looks great! I think that little steamer would be so great as part of a gift with a cookbook - love it!

What is your favorite healthy meal? Probably, lately, garlic quinoa with basil chicken!

Any workout plans for the week? YES! Have a run planned for today, a 4-mile walk + abs planned for tomorrow and a run planned for Friday - woo!

How did you like the steamer? Did it pull the veggies out easy?

I taught Monday and yesterday. Today is my off day, but I think I might go for a short, slow run to keep my legs loose after this past weekend's race. And happy birthday to your sis!!

I'm glad I was able to inspire such a delicious looking dinner! In my next bowl, I am definitely going to add parsnips and sweet potatoes. So healthy! I need to get myself one of those neat steamers too. What a great gift! :)

Hmm favourite healthy meal is a spicy turkey chili or just a giant load of roasted vegetables! Ha ha.
This looks super delicious...definitely would add the cheese and have to be non-vegan though :)

Yummmm! I need to get a steamer! I LOVE steamed veggies. I can't believe I hated veggies as a kid?! That looks delicious!

Favorite healthy meal would probably be quinoa with black beans, tomatoes, cilantro, spices - so, so good.

As winter rolls around I crave salads less, but a big salad with protein, veggies and fruit is one of my favorite 'healthy' meals.

I'm planning on taking Friday off and we are going to go hiking in a town south of Minneapolis. Hopefully I can pull it off!

Looks so delicious! I never thought to steam my veggies, I'm always roasting or grilling them.

I have that same steamer!! Mine's red, but I adore it. Makes steaming veggies super easy. Might need to try some parsnips though...

i love that strainer! i have a silver one but its bulky and yes I stick it INSIDE the pot and it never fits! i love that you can throw that in any pot and it will form to it! awesome!!

Love your new blog look! I have a steamer just like that but its metal, it was the only thing that got me through the 6 weeks in hotel hell! My favorite healthy meal has to be plain steamed veg in some sort of tomato pesto sauce with fish or tofu, I also love soup x x x

What a great idea for quick and easy weeknight meals. I'm going to add this to my list. I'm always looking for quick meals and then I cook more time consuming recipes on the weekend.
