Weekend Update (Including a Blogger Meet up!)

This weekend was packed with activity, but all good stuff! Friday afternoon, I made up a batch of Vegan Pumpkin Chip Muffins to bring to a party we were attending. Since I could not find regular canned pumpkin at any store, I opted to use pumpkin pie mix.


To compensate, I decreased the amount of sugar in the recipe to 2/3 cup and left out all the additional spices. The outcome:

The party Friday night was at one of the Group Fitness Instructors houses. It was an absolute blast. Saturday morning, I taught Body Step and then got back to baking. I made up some bars to bring to Sunday's blogger meet-up.




And then I ran off to an event being thrown in Mount Pleasant by the SPCA. They had some local artists, food, toys for the kiddos, and of course...puppies and kitties for adoption. I was only there for a brief time to drop off a donation. Love the SPCA!

I did some things around the house and practiced my choreography for our Attack launch on Tuesday. Then, Josh and I headed out for a dinner date:


We went to King Street Grille:

Josh got a burger covered with cheese, jalapenos and chorizo on a pretzel bun:


I ate like a six year old and got a side salad and french fries. I haven't had french fries in ages and was just craving them:


Sunday morning, I attended a WONDERFUL blogger meet up at my favorite spot and got the usual:

I met up with Lindsay from Pancakes N Pajamas and Christina from Hungry Meets Healthy:(please excuse my hair...rain and I aren't friends):


Both girls are as sweet as can be! I hope we get to meet up again soon:


Lindsay brought us these wonderful chocolates that I cannot wait to dive into!



The rest of my Sunday was spent working on the yard & starting our garden. I also did some work & housework.

Question for you: Ben and I are going to New Orleans next week, and we're staying in a hotel that doesn't serve breakfast until 8. I was going to get up and do my workout super early to avoid crowding and so I could get it done before we do stuff--besides fruit, which I'm bringing, do you know any good protein bars or travel breakfasts ideas? I was going to get the Atkins protien bars, but they have fake sugar and I can't do fake sugar--makes me sick. Any help would be appreciated!

What a fun weekend & blogger meetup! I don't know that I can pick a best part of our weekend, seeing Charlie Murphy, the farmer's market and Latino/Indian markets and cooking some deelish food all ranked pretty high! Happy Monday girlie, hope you have a great start to the week :)

Waffle fries are the best and your muffins look awesome! The best part of my weekend was teaching a Raw Foods Uncooking class. I'll post the recipe tonight, I think.

I hate when I can't find pumpkin - I was hoping the whole pumpkin shortage thing was just all talk. :-( Pumpking is my favorite - those muffins look delicious!

Rain and I are not only not friends - we're enemies. I look like Oprah with a bad hair day when it's humid.

I've never been to a blogger meet up! Of course I would love to meet you (hopefully this summer!), but really all bloggers seem so nice and sweet, right? Glad you had a great weekend, girl!

Hooray for blogger meet-ups! Isn't it so much fun? I always find it a little strange too, to meet people I feel like I "know" but have never met.

My weekend was pretty lowkey, but Mike and I did enjoy a dinner date and basketball on Saturday night!

Great weekend! :) We had a good one too....my mom had the kids over for a sleepover so we got to go out and play with friends! Ate at an amazing restaurant for the first time...my favorite thing was Mediterranean nachos which I am going to have to recreate (pita chips with amazing tzaziki, hummus, olives, the works!!)...and of course some good wine! :) Lots of good times and relaxing! Hope you have a great week!

The rain and my hair are BIG enemies, specially when I straighten it! Since I have curly hair it takes me a while to straighten it and it seems like every-time I do, its a rainy day! It somehow ends up looking like a fluff-ball, haha.

I had a similar dinner to you the other night--I ordered a veggie sandwich and sweet potato fries...I ate all the fries and about two bites of the sandwich:)

also, about P90x - we are finishing up next week - currently in Week 12! I have already started writing my review. Isn't your husband doing it too? Curious what he thinks...

That chocolate is one of my favorites! I especially like the 86% dark chocolate from Endangered Species.

What are you planting in your garden? I worked on our garden this weekend too and picked up a few starters to add to it. My garden last year was a blunder so I'm hoping this year's goes much better.
