V8 Soup Review & Artichoke Sammy

The weather in SC today is nuts! There were thunderstorms and tornado (!) warnings throughout the day. Luckily, I was able to fit in a 6 mile run outside before the second set of massive downpours.

After my run, I ran out to do a few errands and got some laundry/ironing done.
For dinner tonight, we finally tried the new V8 Garden Vegetable Blend soup I received a few weeks ago. I cooked it up and added some beans for additional protein. I had mine with a side of more veggies and fruit:

And some TJ's Corn Tortilla flats


On the side of Josh's soup, he had an artichoke and cheese sandwich. I roasted up some artichokes with a little olive oil and some spices and put them on top of a toasted roll:


I then topped the sandwich with cheese and put it under the broiler to melt:


All together now with a little pineapple:


The new V8 soup is FANTASTIC! Its thick (I love thicker soups) and filling. I loved the flavor. Run out and get yourself some today!!
Random question- if you had some extra money this holiday season, what would you get for yourself or someone special? Is there a new gadget you’ve been wanting? Or an extra special gift you’ve been wanting to get for your significant other or family member?

I love to indulge in those once a year holiday treats (for me, they're Baci, Pannetone, and Peppermin Mochas). That sandwich is so cute; it reminds me of artichoke dip! :D

Ugh the weather is RAINING here and its awful. Im not sure what Id buy? I have everything I want...maybe a new camera?

I love artichokes :) I can't believe I've never thought of that kind of sandwich!!

I'd love to get my husband an iphone, but it would triple the monthly bill. Ugh. It would be really cool though!

If I had extra $, I'd buy lots - an iPhone, an iPod, DVR, Wii... all the cool stuff it seems everyone else has, lol ;)

Tornados?! Holy cow! That's crazy!! I haven't broken into my V8 stash but I'm so pleased that you liked it. That sandwich!? Genius!! Pure genius!

I treated myself with a new camera. I'm still getting used to it but I love it so far!

I don't feel sorry for your rainy days. It is FREEZING in Utah:) I have never tried that soup, I usually make our own soups...glad you enjoyed it!

I would buy lots of food for the food banks and toys for needy kids. I would also buy my family members and hubs a few special items:)

Yum, your pictures look delicioussss. I've been wanting to get a different heart monitor watch. My polar comes with a chest strap that can sometimes make me less likely want to wear it. I love yours!

I keep hearing good things on this soup. I think I need to give it a try.

And I love the artichoke sammy idea! I am thinking it would also be fantastic on Pumpernickel bread. Okay, you've sparked an idea now for a great sammy creation!!! As soon as I can chew again, I'm on it. ;)

Ooo that soup does look thick & good (def prefer thicker soups too!) I really like the artichoke sammie, I totally just recently became obsessed with those lil' marinated suckers and really need to try them this way!

I really need some new running shoes...Mine are quite literally falling two pieces (as in, the fabric part of the shoe is hanging onto the sole by half-inch bands). I get free shoes through Nike, but I have to wait for them to come in. I would love to just run to Fleet Feet and buy a pair!
That artichoke sammie is drool-worthy!

well IF it were me i thiink i would want a dehydrator. i'm no vegan or vegitarian but i think making dried fruits would be super fun.

but really a good old louis v saddle bag in the checkered print would make my heart skip 10,000 beats. haha but that's a shot in the dark fo sho.

artichoke sammy? girllll I love arti's. But normally they are slathered in an oil bath in a glass jar OR with ridic sodium in a can. Any tips?

Extra cash. Hands down would put wood floors in my in-home yoga studio, would pimp up the alter front display area and would buy a bunch of cool artifacts and statues and such.

I was holding onto some extra cash leftover from my march birthday. I've been eyeing the garmin 305 forerunner and it recently dropped drastically in price - from $300-140!!! Anyways, I was goin to use the cash for that but my mother in law is getting as an Xmas gift for me. So instead I splurged on a pair of black woven Uggs. I know I know but they keep my feet warm and I'm always cold! Plus I'm in love with the woven ones. Can't beleive I spent $140. Lol. But now I have black casual boots and all is well in the world :).

Yum, I love artichokes, perfect sandwich. If I had extra money (a lot) to spend I would definitely get a Canon digital SLR. I want one so bad, but cannot afford it any time soon.

Yum, that artichoke sandwich looks so good! I've tried a few of the V8 soups, some good some eh.

If I had some $$ to spare I would get myself a digital SLR camera or a Garmin Forerunner. But I'd probably spend in on friends and family... or maybe a fun party with all of them!

The soup looks really yummy! Hmm, I want a blackberry but I don't want to pay for the service ;) And I do want a new ipod, but I'm having a hard time justifying that until my current one completely cops out. Sooo... I don't know. I think I'd want to use it to buy gifts for the Salvation Army "angel tree" program. My family and I already got stuff from 2 kids wishlists for them, but I wish I could do more.

I hope your weather clears up!

Oooh, that V8 soup does look thick and delicious. I always forget about soup, but when I make it, I love it. Should really eat it more often, especially now that it's getting colder.

If I had extra money, I would spend it on my family's Christmas gifts. Love buying stuff for my parents after they spent so much money on me growing up.

Artichoke sandwich - that's my kind of "grilled cheese". :)

Oh wowee that whole meal looks yuuuummy! I am not a fan of packaged soups, but even that looks delish.

I need to get a new laptop for Christmas, because mine is suffering from old age! Fingers crossed Santa get's the message :-P

Hmmm...if I had some extra $$$, I would probably be boring and use it to help pay off my couch or TV! And maybe save some for Vegas. :-) Gosh, I sound selfish?! Okay - I would definitely donate to Riley's Children's Hospital (in Indy), too!
