Vegan Asparagus Soup

Hi Hi! Hope you had a nice Monday! I had a busy and relaxing day (which sounds odd…I know). Today I:
  • Got up early and cleaned the whole house
  • Went for a run (felt good to run after all that weight lifting this weekend!!). I did 7.4 miles:


  • Lots of laundry and ironing
  • A half day of work with a cranky co-worker:

  • Just over 4 mile walk/chat with my Aunt ;) :




I was a bit nervous about how this was going to turn out. It was my first time making/using Cashew Cream:



The result(sorry it looks a bit foamy, I used an emulsion blender):


TOTALLY fantastic and creamy! I went back for seconds. Thank you for the great recipe Tal! Have you ever made a recipe you were nervous about? How was the outcome??

Looks great! I am making a vegan alfredo sauce this week that I am a bit nervous about. It is from Vegan Yum Yum so I am sure it will turn out fine :)

Sounds like a really yummy soup.. Ive never made that before! Im always a bit nervous about new recipes simply because I hate wasting food and money (that is if I end up hating it).

Wow, girl 7 mile run and 4 mile walk.. you rock!! Happy Monday eve. :)

Sounds like a lovely way to start off a week.

I beleive I try a new recipe without knowing how it will turn out at least once a week. But that is the joy and fun of cooking. I figure, if I like at least 95% of the ingreidents that go into it, it has to turn out great, right?!

nervous? no.
making recipes that i have no idea what the outcome is going to be, exactly? yes, daily :)

I dont use cookbooks, and just roll from intuition so one never knows!
love cashew cream. If you just soak cashews, then drain them, add a dash of agave and blend the heck outta them, that's cashew cream, i.e. vegan coolwhip, and it's sooo good!

I LOVE LOVE LOVE cheesecake--but I'm always too nervous to make it. I've seen/experiences so many cheesecake disasters--but I'll have to man up one day, and just do it!

Ooh, that looks awesome! Haha I always get nervous with new recipes. Especially pancakes! I always failed on pancake making until very recently :)

huh!! Cashew cream is fascinating and the soup really does look creamy and yummy. Thank you for sharing Erica!!! I used to be skeptical about how moist vegan cakes would turn out, but after a very successful vegan pumpkin cake, I am now free of any doubts! :)

I normally make recipes that I'm really comfortable with, but I'd like to try one that I'm not so confident about! That's the only way to learn how to cook well, right? :)

Oh my gosh - my lovely friends made this cashew cream once and we had it on beer and chocolate waffles (i kid you not). It was a dream!

That soup looks amazing! I love asparagus, and I can imagine it tasted great with the cashew creme. Honestly, I don't really get nervous when making new recipes, unless I am serving them to other people. For example, if I bake a cake for someone I can't cut into and taste it before giving it to them. I am always afraid it won't taste good!

Yes...I'm scared to make a lot of new things!! I was scared to make acorn squash and tofu, but I absolutely LOVE them both now. Next up? Brussel sprouts!!

Yum! I love trying new things, but I do get nervous because I hate wasting food! So if it's something entirely new, chances are I'm cautious. But I love cashews and I love asparagus, so this one looks like a winner!!!

Everytime I "healthify" a recipe, I am nervous about the outcome. I always tell Mallard to be real about how things taste so I can tweek the recipes to make them better so he does not hesitate to be honest ;)

LOL on the cranky co-worker! So glad the vegan asparagus soup turned out good! I'm new to the world of cooking with cashews myself but so far everything has turned out great! I love experimenting with vegan recipes these days.

Oo that soup looks creamy and tasty! I have made a recipe that I was nervous about and it was actually soup also! My Italian neighbor lady used to make a spinach white bean soup and I wanted to try and remake it--I didn't think it would turn out anything like the original, but it was identical!

Yeah making a soup with cashew cream would definintely make me nervous as well! But it sounds awesome!! Sounds like a great run...man your in shape! I'd probably burn that many calories in a 4mile run. Hi Frank!!!!

mmmm, yummy soup! asparagus is one of my faves!

whever i've cooked with a recipe i've been nervous about, it either works out incredibly amazing, or horribly bad. never a middle road. it's always fun to take that gamble though!

Just last night i made Mama Peas cinna rolls and was SO nervous that they wouldn't rise because I wasn't sure if my yeast was dead! Thankfully they worked out!
