Did you have a good day? I did! It was my first day of my adjusted work schedule (abbreviated days Monday and Friday) and I can already tell how much I’m going to love it. I got up early to finish packing Josh’s lunch and to clean the house. Next, I got to work and then took a mid day break to run a few errands. I finished up with work and took Frank for a walk, prepped our dinners, and then headed out to teach Body Step.
For dinner tonight, Josh is having turkey stir fry with asparagus, water chestnuts, cashews and stir fry sauce topped with regular and black sesame seeds:
I will be having a huge salad with mixed greens, red pepper, steamed asparagus, walnuts, and tomatoes. Later, I plan to top this with olive oil and lemon juice, a little mozzarella cheese, and serve with a hunk of bread and a chopped apple:I love prepping our dinners! Do you prep ahead of time??
I cannot believe it is November! My Body Pump training is this upcoming weekend and I am excited and nervous! What are you looking forward to this week??

I loveee preparing ahead of time or well in my head preparing ahead of time. I'm trying to think about what I want for dinner tonight and I just can't come up with anything! argh!
this week I'm totally looking forward to a fashion show I'm going with a friend to in the city on Saturday night...now I just have to figure out what to wear!
i can't believe its November either, but that just means that Thanksgiving and Christmas are right around the corner! That salad for dinner looks awesome, what kind of dressing do you normally like on your salads?? are you an oil and vinegar type of girl, or do you like some sort of bottled dressings?
I always prep ahead of time - it SAVES time :)

Sometimes I prep dinners ahead, sometimes I don't - yours looks fab!
Prepping ahead is key, especially if you are busy with school or work during the week!
i love prepping for meals too! even when i'm at a friend's house, i always volunteer to chop, stir, whatever i can get my hands on!

this week i'm looking forward to going out of town for the weekend and getting to the other hawkwatch that i work for! and i get to hopefully stay at a super ritzy hotel because a friend has a friend working there..hehehe!
those both look and the plan sounds great! I really hope to prepare ahead of time..but most of the time I am generally looking around the kitchen and doing something which strikes my fancy.
Of course with some of the bigger plans I try to plan ahead.
Its so so difficult getting used to short days..but its nice to be able to get up early..I hope that continues for sometime though :)
You are such a prepper i love it!! :D ha I never know what I want until i storm in the door and raid the fridge, so I never prep! I love leftovers though so I don't make making a lot one night and then eating it the next night, orrrr going out to dinner is always a great option ;D Cute interview, totally agree on the blog envy tips. Im a huge prepper.. lol. Whatever I can get done ahead of time is worth it. I find myself doing it more so now that work is back in session. This summer I was more lax.
Im looking forward to a field trip to Duke's art museum tomorrow with my 6th grade kiddos (uh actually im just stoked to get outta school for a few hours) lol. ;)
I read the interview while waking up in bed! You had great answers :) So glad the new schedule is going well. Hopefully you'll be less stressed and less busy.
I don't usually prep dinner ahead of time because I usually don't know what I'll want to eat later. Plus I can make my dinner lightning fast!

I do love prepping dinners. It's so nice to be able to come home and not worry about making a huge mess in the kitchen. I like a little cooking therapy to end my day, but not an overly stressful cooking experience. You know?

I love prepping and doing as much as possible ahead of time so I don't feel rushed when I need to eat!
I don't often prep dinners ahead of time, but I do start dinner prep when I know I won't be home until late..

I must say that I never prep my meals ahead, with the exception of overnight oats! Maybe I would be less stressed if I were more like you and planned a bit more...
I don't prep ahead of time near as much as I should. I tend to eat what I am craving. So, I can't really prep ahead for that. I do freeze pumpkin puree. Occasionally, Mallard or I will make Snuffy some Annie's Mac with Veggies and Chick'n mixed in and freeze it in case of a hectic night.
i wish i prepped ahead of time because it would save me so much money!

I try to prep dinners especially if I know that I have a class to teach/attend at the gym that night. I'm usually starving when I get home, and it is nice when everything is ready to go into a pan! Great interview!! Any pointers on teaching fitness classes? I'm just starting this week to teach spin, and I'm kinda scared! :)

That abbreviated schedule sounds great. I love any work schedule that is a bit different than the standard. That's why I love working from home I guess.
Catching up on your blog and I love all the recipes. Congrats on all your running! I haven't been for 2 wks and I'm a bit worried what my distance will be when I'm back at it.
Saw your travel question and I still highly suggest Jamaica. It is so easy to get to for us east coasters. We stay at Sandals, but I've heard Couples is great too. It is always our fave vacation of the year. Sun, good food, drink and pure relaxation.

Forgetting to defrost the meat isn't silly at all--since you don't eat it, it's not the forefront of your mind! That's like me buying Ben cokes at the store--I don't drink cokes, so unless I write it down, I forget!
