Pumpkin Chocolate Chunk Oatmeal Cookies & Stress

After I left ya'll yesterday, I ran out and taught Body Attack. When I got home, I enjoyed some dinner and then got to baking. As I mentioned before, we had a pot luck at work today. You guys provided so many great ideas for vegetarian friendly dishes I could bring in and I just did not have time to run to the store (don't worry...I plan to use lots of your ideas for dinners for Josh & I). Instead, I decided to bake up a batch of Maria's Pumpkin Chocolate Chip Oatmeal Cookies. I followed the recipe almost exactly, except I subbed pumpkin pie spice for the nutmeg & all spice and used chocolate chunks instead of chips. The beautiful result:

Today has been a super stressful day! All of my projects at work are pulling me in multiple directions. I ran to the store on the way home to pick up some buffalo chicken for Josh and his friend (who JUST finished playing their new video game). I also roasted them up some potatoes. All together now with a watermelon slice:



My plan for the afternoon was to go for my last run before my 10 mile race on Saturday, but all of this work along with the pouring rain made that impossible :(. I am now eating some leftovers for din din (vegan asparagus soup, fruit, veggies, nut butter). I still have lots of work to do- hopefully it won't be too late of a night. Sorry to be such a Debbie Downer!

Sorry you had such a stressful day. At least it's hump day! It's all downhill from here, right? :)

It just seems to be one of "those weeks" if you ask me... don't worry about being a Debbie Downer girl, you aren't at all - esp with those lovely cookies :) We are getting the remainder of Hurricane Ida here and I think it's close to flooding, seriously been pouring down rain all day and the wind is howling :( Bah humbug over here haha, def not helping my mood! :/

Glad you liked the cookies. Put some in the freezer. I think they are even better frozen:) Sorry you had a stressful day. Relax tonight! We had the day off so it was really nice. We went to a lunch with a friend, watched a movie and relaxed. It was so nice!

nice work on the cookies, those look awesome and I could easy GF them with subbing wheat with oat flour. Yummy and veganize them with buttery spread. Yum!

Remember, it is better to undertrain than to overtrain. Just get out and walk for a little bit the day before. The rest will be good for you. With your run times lately, you will be fine!!! Those cookies look great!! :)

Yikes! Your schedule always makes me confident that I can power through mine. No need to worry about the run - I'm sure you'll do great! Your times always amaze me!
I haven't taken Body Attack yet at my gym. I need to find a time it coordinates with my schedule. Is it a good workout?

Dont ya hate when you have plans to workout and the stupid weather screws them up.. we are prob having similar days.. its been like a monsoon here.. i tried to go for a walk last night and got literally blown over.
