Brussel Sprouts and Squash Salad

Phew! Monday is done- the hardest part of the week :) After work, I came home to find sleeping beauty...

All of the house guest excitement seems to have taken its toll on the Frankster ;). Once I got Frank out to the bathroom, I laced up my shoes and went for an almost three mile run. I then hopped inside to practice Body Attack for a half hour. I got cleaned up and started in on dinner.

I cut up some brussels and squash and tossed them with a tablespoon of olive oil.

I placed them in an electric skillet at 325 degrees and sprinkled them with S&P. I let them cook for about 5 minutes while I got Josh's steak under the broiler.


Then I mixed them up and allowed them to cook for another 4-5 minutes until tender. I mixed my share of brussels/squash with a half a green pepper, an apple, sliced almonds and a few teaspoons of Parmesan cheese:


I served Josh's squash/brussels as is with his steak and some pineapple/strawberries:


Time for some HGTV, relaxing, and perhaps a piece of Matt's bread. How was your Monday?
Also, one more question for you guys, I am thinking about purchasing a heart rate monitor- Do you use one? If so, do you like it? What brand? I was seriously jealous of Kath's awesome Garmin this weekend and am contemplating purchasing one.... ;)

You know I love anything with brussels in them! ;)

I've been really wanting a heart rate monitor myself for awhile now but haven't really researched them much to see what I'd want. You'll have to let me know if you find one you like.

I love brussel sprouts!! (Even though I get soooo many strange looks when I say that.) I'm so glad to see I'm not the only one who likes them. I'm definitely gonna give this recipe a try!

Those veggies look fantastic. I usually roast brussel sprouts in the oven, but they look great cooked in a skillet. Yum!

I have a Polar F4 for the gym, and a Garmin forerunner 305 for running outside. If you mainly run outside, I'd go for a garmin. But since it's a gps device, it doesn't work for indoor gym workouts. The polar f4 is great, pretty inexpensive, and simple for tracking cals burned on elliptical machines and fitness classes :)

I have a Garmin 305, which comes with a HR monitor. Honestly, I used it like 3 times, and then got annoyed with the strap. I wasn't sure how accurate it was either! I mainly wanted the Garmin for distance/times stuff.

If you don't need a Garmin (for GPS purposes) I recommend a Polar...I've heard good things!

I'm not sure if you've tried this, but next time you are broiling something just stick the brussels sprouts in the oven with it - oven roasted brussels sprouts are hands down my favorite food!

As far as the HR monitors go - I don't have one, but I have some serious Garmin lust every time someone takes a picture of theirs to post their run stats! I say go for it! :)

That sounds delicious- your sprouts cook in 10 minutes? I roast mine for about 40 mins!

I ahve a Polar F4 HRM. I love knowing when I am in the zone and how many calories I burn. I find that I work out harder since I got it.

Love the veggies! Have you ever tried brussels sprouts raw? I saw one of the contestants on The Next Food Network Star mention that her kids will eat them that way, but not cooked. I don't particularly care for them cooked so I'm wondering if they really taste that much different.

I have a Polar F6 and love it. It's really functional for the price though eventually I'd like one with a GPS.

I agree with Anne...I have the Polar F6 and love it, but I do most of my exercise inside. I would love the GPS function but it is $100 more and I only run outside 1-2 times a week. Also I like the F6 over the F4 because it only reads your HR (if you are in a group class the F4 can get confused). It definatly has helped me bump up my HR when I am slacking.

Boo on Mondays, but somehow I always survive. Funny how that happens. :) I don't have a HRM so I'm no help - in fact, I don't even know what my heart rate should be when I work out! Bad exerciser, haha...

FRANK! That's how our dogs sleep too and they totally destroy the pillows on our couch. No one in our family cares though because it's like their little nests ;)

Strawberries and pineapples are such a great fruit combo!

I have the Polar F11..it's realllyy great and works like a charm :) I got it for a good deal on Amazon but I don't think I needed such an extravagant one! HRMs are so fun though!

I use one - I have a Polar - I forget exactly what model, but it's pretty basic. I love it though - it really helps you understand how hard you're working and what it feels like to be in your target zone.

I am too cheap to buy a Garmin, but I also go to the gym as much or more than I run - so it would be pointless for me in terms of distance/mileage tracking.

hey erica! i wanted to make sure you got my response and I dont think the whole email response thing works through my comments haha but I think I would have purchased the cheaper one just because I use it just for the calories. I do like that it keeps a weekly journal of it and you can also send them online (which I haven't taken advantage of yet haha go figure) If you're just looking for calorie tracking and maximizing your workout then definitely go with the F6. Secretly I also really liked the color of the one I got in the F11 haha. I've heard the Garmins don't work at all inside so if you're looking for something for just inside I wouldn't spend the money on the Garmin just yet. Hope this helps :)

I also have a Polar F4... I mainly do workout videos and Zumba/Yoga classes... so i don't need it outside of that.

The garmin seems incredible if you do a ton of outdoor running... or seems like it'd be extremely helpful if you are training for a marathon, etc!

I have one and love it - but it does not have a GPS, and every time I go running I wish that it did!

I have a Polar F6 though, and it's schnazz in all other departments.

I really want to try finding a good way to cook sprouts. I think if I roast them forever, I might like them.

I'd love a heart rate monitor. I want one for my bday but not sure if we'll have the money :-(

I LOVE my Garmin. It seriously changed the way I run. I bought mine on EBay for a much lower cost than I would have in a store.
